    Instant Pot Lo Mein
    1/3 Cup Carrots
    1/3 Cup Snow Peas
    1/3 Cup Broccoli*
    1/3 Cup Spinach*
    3 tsp Minced Garlic
    1 tsp Ginger (not Ginger powder)
    2 Cup Veggie Broth
    1/2 Cup Soy Sauce (low sodium)
    2 Cups Partially Cooked Rice Noodles
    1/2 Cup Brown Sugar
    1 Tbsp Corn Starch
    1 Pepper to Taste
    1. Add Veggie Broth to Instant Pot
    2. Cover with noodles
    3. Add all veggies EXCEPT Spinach*
    4. In a separate bowl mix together Soy Sauce, Brown Sugar, Garlic, Corn Starch, Ginger, and Pepper
    5. Add sauce to Instant Pot
    6. Manual High Pressure for 4 minutes
    7. Quick release any pressure
    8. Stir in Spinach and serve
    * add in any vegetables that you would like
