    I'm so glad to be back with a new What's for Dinner video in the new year! I hope y'all had a great Christmas and a happy new year. Now let's get to cooking!!
    THIS WEEK'S RECIPES:
    CROCKPOT CRACK CHICKEN AND RICE: www.plainchick...
    WHOLE CHICKEN IN CROCKPOT:
    Pat whole chicken dry. Rub with spices - use a lot! We used garlic powder, onion powder, smoked paprika, kickin' chicken seasoning, salt and pepper. Place on top of a bed of veggies and cook on high for 3-4 hours - until internal temp reaches 165. If you want crispier skin, put it under the broiler once complete for about 10 minutes.
    CHICKEN GRAVY:
    1/2 cup juices from the crockpot (fat removed)
    1/2-3/4 cup chicken broth
    2 tbsp flour
    1/3 cup heavy cream
    Add juices and chicken broth to skillet over med. heat. Add flour and whisk together until all dry flour is incorporated in. Add more chicken broth as needed to reach desired consistency. Add cream and whisk. Pour over chicken!

    BRT EGG SCRAMBLE (BACON, RANCH, TOMATO)
    bacon, cooked and crumbled
    eggs
    ranch powder
    cherry tomatoes, halved
    small onion, diced
    salt and pepper
    shredded cheese
    olive oil
    butter
    Melt butter and olive oil together in skillet over med-hi heat. Add onion and cook until soft and they get color on them (3-5 minutes). Add tomatoes and generous sprinkling of ranch seasoning. Cook 3-5 minutes. Add eggs directly into pan and start to scramble. Add more ranch and salt and pepper. Add cooked bacon and cheese. Done! Add sriracha and serve with hash browns!
    KNOCK OFF CRACKER BARREL HASHBROWN CASSEROLE: from @Moss Family TV
    32 oz. frozen hash browns, thawed
    ½ cup butter, melted
    10.5 oz. cream of chicken soup, (I used the cheddar cheese condensed soup)
    16 oz. sour cream
    1 small onion, finely diced
    2 cups cheddar cheese, grated
    1/3 teaspoon pepper
    Directions:
    Preheat oven to 350 degrees.
    Ensure that your hash browns have thawed. (Otherwise they take a very long time to bake.) You can defrost them in the microwave to speed up this process.
    Pat them dry of excess water.
    Set ½ cup of cheddar cheese aside.
    Combine all remaining ingredients in a large bowl.
    Place it in a greased 9x13 casserole dish and top with remaining cheese.
    Bake for 35 minutes, uncovered.
    Increase heat to 375 and bake for an additional 10 minutes, until the top begins to crisp and brown slightly.
    Remove from the oven, let it sit for 10 minutes, and serve!

    I've been married for almost 40 years and have cooked for 40 years....I was blessed with a mother, Grandmother, and my Nonna who all were amazing cooks and taught me. My Nonna taught me Italian dishes, my Grandmother and Momma taught me southern and country cooking. Sometimes we find ourselves eating the same things over and over though and would like something different, so this will give me a little bit of variety in our meals. It is only my husband and I now, so it will be super easy. Thanks honey, you are a gem.

    Those Rip Van Wafels are really good! I’ve seen a lot of people place the wafel on top of their coffee cups and the steam kinda warms it up ☺️

    OMG...took the crack chicken recipe...replaced the bacon with ham, used wild rice and threw it in the instant pot for 30 minutes because I forgot to thaw anything out. It was one of the best dinners we’ve had in a while. Made it Saturday and finished the last of the leftovers today. Thanks for sharing all the new recipes. I had just watched this video and it kept us from eating out.

    With the eggs, I like to sauté diced onions and diced bell peppers till tender, pour over the eggs, scramble a little, cover with tomatoes and cheese. Great for breakfast or supper.

    Your son is the spitten image if your husband, mannerisms and all. These all look yummy. 😄. My mom adds cornflakes in butter on the top and it makes a crunchy topping for the hashbrown casserole. It gives an extra dimension.

    Everything looked delicious. I've been wondering how to do a whole chicken in the crockpot & that looked really good. The look on Cole's face when you told him there was rice in the crack chicken and rice was hilarious....he looks just like Steven. And you can't go wrong with hashbrown casserole, I could eat myself into coma with that stuff lol

    These sure look good! I wanted to share with you that I've made a few of your recipes recently. I made your Chicken Bacon Ranch sliders on New Year's Eve. Outstanding! And then on New Year's Day, I made your Southern Pecan Chicken for dinner. Then Monday night I made your Cheeseburger soup.     You're supposed to place it on the top of your coffee or tea (hot) for a few minutes to warm it up with your hot drink.....yumm! Set it on the top of your mug and the steam makes the filling even better.

    Those waffle cookies are so good. A friend told me the traditional way to eat them is to set them on top of your coffee cup for a minute to let your coffee warm them up. Sooo much better ☺️

      @@MandyintheMaking yes! It looks like those are the “healthy” version of the Dutch Stroopwafel which you place over a mug of a hot drink and it softens it up and melts the caramel.

    Just a heads up, mix the flour with cold milk or water then add to drippings. You won’t get lumps in your gravy.

      or use Wondra flour instead of regular AP flour - its much finer so it mixes in very quickly

    I make something similar but it’s baked in the oven. I don’t use rice but broccoli and cauliflower, cream cheese, chicken, bacon and ranch powder with a dash of cream. It’s delicious!

    Mandy have you ever tried baking your bacon? GIRL it is so easy and makes the best melt in your mouth bacon. 20 mins on 400! And for easy clean up...line your baking sheet with parchment or tin foil!

    I make eggs with salsa. That is good too. Then my grandson like to cook ramen noodles in the microwave and then take the water off and mix in the packet an fry them until crispy and add in an eggs and fry. That is good too.

    Came home from work looking for something to make for dinner and turned on your channel and found the hash brown recipe. Had everything in the Frig & why not try it! SO easy, I used Simply Potatoes (didn’t have frozen), cream of chicken with Herbs & a can of green chilies with everything else. Wow was it good! My granddaughter & I had 2 helpings & I’m taking some to wk for lunch or brunch. Ham would taste good as a side. Thank you…love your kitty slippers!

    When you added flour to your stock (meat juices), you made a rue. My Daddy taught me how to do that. A rue can be used after cooking ANY meat in a pan with all them brown bits, maybe add a bit of butter, brown then add milk or your cream. Home made gravy for ANYTHING ya'll!! Tip: If you brown the flour and the butter before adding your extra liquids.... it makes the flavor really pop and cooks out the grainy-ness of the flour
