Pineapple Cheesecake
Pie Ingredients
1 (8-ounce) package cream cheese, softened
1/2 cup sugar
8 oz crushed pineapple, drained (reserve juice)
1 tablespoon lemon juice
1 teaspoon of lemon zest
1/4 teaspoon vanilla extract
2 eggs (room temperature)
1 6oz graham cracker pie crust
Topping Ingredients
1 cup sour cream
2 tablespoons sugar
1-2 tablespoons of reserved pineapple juice
Directions:
1. In large mixing bowl beat cream cheese and 1/2 cup sugar on medium speed of electric mixer until fluffy. Beat in lemon juice, zest, pineapple, and vanilla. Add eggs and mix well.
2. Place crust on baking sheet. Pour in cream cheese mixture. Bake at 325°F about 25-30 minutes or until center is set.
3. Combine reserved pineapple juice, two tablespoons of sugar, and cup of sour cream. Spread on top of cheesecake and bake for an additional 10 minutes.
4. Garnish as desired. Store in refrigerator.

I am a pineapple-lover, so I would definitely like this pie. I'm so glad you used lemon juice and extract--I used lemon in my pineapple double crust pie and cobblers, and I thought it really helped to bring out the flavor in a way that most people wouldn't expect. This would be the perfect refreshing dessert for a summer barbecue. Thanks for sharing--stay cool down there in Texas--I heard it's been super hot!

My husband loves pineapple but he hates sour cream it it possible to use something else instead? What's your thoughts?

Making this now! You may want to look at step #3 of the recipe. For future reference I think you meant it to say 4 tsp of sugar and 1 cup of sour cream. Thanks!

My gosh this was a great video. I love how you did an easy cheesecake and looks so good and yummy. I’ve got to get this want to try with everything going up and how bad everything is getting we need something good to keep us motivated.
