Mooli ka paratha, also known as radish paratha, is a popular North Indian flatbread filled with a spicy grated radish mixture. It's a flavorful and satisfying dish, often enjoyed for breakfast or lunch.
Ingredients:
For the dough:
3 cup whole wheat flour (atta)
1/2 tsp ajwain / carrom seeds
Salt to taste
Water as needed
1 teaspoon ghee/ oil
For the filling:
3 medium grated radish
1 teaspoon red chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon roasted cumin powder
*1 teaspoon garam masala powder
1 teaspoon coriander powder
1/2 teaspoon amchur powder (dry mango powder)
1 teaspoon grated green chilies
1 teaspoon grated ginger
1 teaspoon grated garlic
1 medium onion finely chopped
1/4 cup chopped coriander leaves.
1 tablespoon kasoori methi
Salt to taste
Oil for cooking
Grating the raddish :
Grate the raddish in a bowl ,now add 1 tsp salt to it and cover and leave it aside fo 30 minutes.
After 30 minuted drain out the extra water with the help of a stainer sqeeze it well.
Instructions:
Make the dough:
In a bowl, combine the whole wheat flour ,ajwain ,ghee/ oil and salt.
Gradually add water here( i have used water drained out of raddish) and knead into a soft and pliable dough.
Add 1 teaspoon oil to the dough and knead for a few minutes more.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Prepare the filling:
In a bowl, combine the grated radish, red chili powder, turmeric powder, roasted cumin powder, garam masala powder, coriander powder, kasoori methi ,amchur powder, green chilies, ginger, coriander leaves, and salt.
Mix well until all the ingredients are evenly distributed.
Make the parathas:
Divide the dough into equal-sized balls.
Roll out each ball into a thin circle.
Place a spoonful of the radish filling in the center of the circle.
Bring the edges of the dough together to enclose the filling, sealing tightly.
Roll out the stuffed dough ball into a paratha, dusting with flour as needed to prevent sticking.
Cook the parathas:
Heat a tawa or pan over medium heat.
Place a paratha on the tawa and cook for a few minutes until golden brown spots appear.
Flip the paratha and cook the other side until golden brown.
Apply a little oil or ghee to both sides of the paratha and cook for a few more seconds until crisp.
Repeat with the remaining parathas.
Serve hot:
Serve the mooli ka paratha hot with yogurt, pickle, or chutney.
Tips:
For a spicier paratha, add more green chilies or red chili powder to the filling.
If the radish is too watery, squeeze out the excess water before adding it to the filling.
You can also add chopped onions or paneer to the filling for added flavor and texture.
For a healthier option, use whole wheat flour and minimize the amount of oil used for cooking.
