They don't really stop the guitar stuff. They just added in more elements to the mix like EDM. You've seen Vision, their latest comeback, and it's very heavy on the guitar. I think the reason for this is that their CEO, who founded Happyface/Dreamcatcher Company, got his start in Kpop by moving to Japan and bringing JRock music to South Korea. He loves Rock music so I don't think they will ever move too far away from it. Many of their B-sides are very different though, and cover a lot of different musical genres.
"What" is still in my top 3 favorite title tracks. It's heavy for a Korean release and I love the syncopation. Story-wise this is the first time they wear non-uniform outfits, which I believe is because they lost Yoohyeon (or at least her spirit) and are kind of broken. You can also see them search for her alone, not as a group. For me this is a song about the loss of a loved one and what that does to a group or family. I might be reaching, but this is the meaning for me.
they never stopped with the rock sound on their titles tracks and the members said they never plan on doing so. Their sound concept is to integrate rock sounds along with other sounds as well but rock will always be their main sound iykwim

The early releases leaned heavily into a J-Rock sound, but by the end of the Nightmare series they were starting to push past that. You can look at their career path as a condensed version of the history of rock in a way - starts out pretty basic, four-on-the-floor, driving rhythms (J-Rock). Then in the 70s through to the 90s you start getting strong elements of progressive metal/rock (Deja Vu) and the templates of traditional heavy metal (What, Piri). Then from there you start getting fusions of rock/metal with other genres in both an effort to stay relevant but also because you now have a generation of artists growing up listening to different styles and being equally influenced by them - so you get rock with EDM (Scream), rock with synth-pop making a kind of industrial sound (Vision) and all other genre-mashes in between.
