How much coffee you have ran through HU burrs on the LCU? It seems HU are capable of making great pour over coffees and little differences between lab sweet burrs. Was difference big enough for you?

Because I was considering hunting for a Lab Sweet from what I had heard about it being the rare unicorn that is good for both filter and espresso, but finding something to run the SSP HU might be more realistic for me
Whew, dude. If you love EK43 shots, when you had to “chirp” the burrs to even think of pulling espresso, what configuration of these grinders would you choose? 2. Is there a difference between these two grinders in the cup? Assuming same burr sets? 3. Are these grinders easier to keep aligned than EK? Than Frank’s modded EK? 4. Why did you ditch the EK? 5. What is your preferred set up for espresso and why? For brew/pour over? 6. Any thoughts about Niche Zero? 7. Are you sold on big flats? 8. Have you paired these machines with profiling espresso machines? (The whole madness started with grind finer, long soak at the start=higher sweeter extraction.) 9. Maybe write out a comparison list. Looking at the 2 grinders and wondering why the monolith didn't put their VFD in a separate control box like the levercraft as the electronics of the VFD are very sensitive to heat 🤔 need large heat sink aeration and often a fan and still will only last 10 years at best before needing to be replaced I think owners of the Monolith will be disappointed in 3 to 5 years when the VFD burns out and they get a 500.00 dollar repair bill
I'm also running a coffee shop in Asia, and unless you have connections in the USA, it will be complicated and costly to have one exported. The Ultra will probably be easier to acquire and probably won't have such a long wait time. Neither of these grinders excel especially in high-volume shops since they are single-dose grinders, but if you want a lot of flexibility in switching between beans often they are great.
Truth is it's very difficult to get the Monolith Max. Production is very limited per patch. Unless you could be sure you can get one, otherwise, you'll need to wait forever. As for Ultra, it's actually built and designed in China among a group of coffee lovers. In US, they sell 110V version with some modification from the original 220V version. Problem is even for the 220V version from China, you will need to wait at least 5 months after the down payment. Therefore, in this way, I would not recommend these 2 grinder (they're truly awsome). You could consider Ditting 807 lab sweet for your shop. This is a awesome commercial grinder with very low retention suitable for both filter coffee and espresso.
Audio is super low hard to hear had to crank the amp... also you need to just get to the point, way too chatty and off the rails. This whole video should have been 5 minutes max
I sold my $3K Kafatek and I switched for $20 grinder from home depot. I'm grinding my coffee 3 times. Finest coffee ever. Amazing quality espresso ;-) I don't care how much noise I make. Kafatek cost $3K and looks like basement water pump. My grand grandfather have similar design in his basement back in the day. Can I use wi fi and set weight of the coffee from my smartphone? Can I put this on my countertop and don't hear from my girlfriend "take this ugly think out of here I beg you"? Why I do need Mr Puff or paint brush to clean the grinder? Why so much coffee is sticking to that $3K thing? Why portafilter holder looks like was designed by 4 year old? Why this $3K grinder have so much vibrations, portafilter is falling if you not holding by hand during grinding process? Why this $3k grinder is popcorning so much? Why I do have to cover the grinder by hand during grinding process?

They have to get a better controller box for the ultra. That big ass box kills it lol

Hey, Where's the third burr?
How was the retention on the Ultra after the run in ? Is it close to zero retention ?
Yes.. I run the grinder at about 400 rpm. When the grind is finished, I ramp up the speed to 1500 rpm, and it clears the chamber.. very quickly.
The retention is about the same as the Monolith Conical that I run side-by-side
