    I am a former head chef and kitchen manager but watching Chef Marco always makes me feel like I am still in kindergarten. The man is a true artist with food in every sense of the word. I can say with no amount of ego that I was very good at what I did; however, while I could cook this dish, Marco composes, creates, and fully realizes the dish on a level that I could never hope to achieve. Mad respect to him.

      Gordon doesnt yell at people on masterchef except in food service challenges when they undercook proteins. Hes notoriously nice to masterchef compared to his other shows.

      I can't find it on RUclips anymore, but I once watched an old Marco video, where he once said that to be a good chef, all you've got to do is lots of little things well. It hit me like a ton of bricks, and couldn't be more evident in this video, because it's often the simplest things that people get wrong in life and the kitchen.

    Marco is the kind of chef that gave up on the michelin life. Yet he is the kind of chef i would recon would manage to get 2-3 stars, quite quickly, if he whent back into the michelin game.

      Hypogonadism in fairness he never lost them, he just told the Michelin group to hang and shut his restaurant. Based on what he says though if he ever got back into the restaurant game again he wouldnt even think of going for stars. He described it as cooking for people who know less about food than he did at the expense of his own customers and style. He used to work with a chef that had 2 stars but now has none and swears by the statement that guy’s cooking in his little restaurant in London is still better than any Michelin chefs because he’s cooking from his own world as opposed to catering to the pretentiousness of the judges at Michelin

      I think it's just a common English thing to say, maybe somewhat upscale in dialect. It's sort of like, "Do you understand?" or "You understand?" or "A'ight?" or "Na-mean, bruh?"

      It's just edited fast. There aren't any difficult techniques here at all, except maybe cutting the carlic and shallots really thin, which isn't too hard with sharp knives and some practice which all of these guys should have. I'm sure he gives the instructions at a reasonable pace, there shouldn't be any problem following this recipe tbh.

    Cam here from knorr videos. It’s amazing how different he is. This guy is scary... Gordon is like an overly active volcano that spews little bits of lava everywhere whereas Marco is the quiet one... but when he blows... there goes half the earth.

    Love watching him mentor.
    Especially stuff like the "Whats a concassé", instead of getting high and mighty like some chefs or angry at inexperience like others. He simply puts it in simple terms and shows her the end product so that she has an understanding of what to do then swiftly moves on to continue the dish

    The man is a genius. He perfectly blends the creative flair of an artist, with the clinical precision of a scientist. The way he breaks the rationale down, while simultaneously showing such flair. These videos have become a guilty pleasure of mine and I know bugger all about cooking!
