    Your cooking is such a unique mixture of PA and Southern food,everything from scrapple and cheese steak(with Cajun seasoning!) to hog jowl and tamalitas. Keep the videos coming, I enjoy them immensely. You and your family are the part of America I love, (and that I fear is slowly dying out) self sufficient and looking out for yourself without worrying about what the government will do to look out for you. I hope to someday soon get out of the construction business rat race and live more here in PA like you do down there in TN. But until that happens your videos keep the dream alive, keep em coming!

    *Absolutely a BIG YES on the Video for Dressing out those Geese... Baking soda was used when I was growing up as an additive when making chipped, slivered, and ground meats(especially sausage meats too) because it caused the meat to retain its own water, & more of its own retained natural flavors.. Plus it allowed aromatic spices to remain absorbed and not steam out while sautéing, grilling or frying as the meats were more rapidly crisping up and sealing in flavor and... It probably also enhanced the Mystical & Mysterious Maillard Reaction... Then again, it tenderizes tough working muscle meats and had way less salty taste... That tenderizing part, I've never used it for that... but for Crisping baked Chicken Wings really fast and for making sausage and burgers taste way better... Oh yeah it works...* 👌👍

    *Tip:* I use about 2/3 teaspoon of baking soda mixed well into 1-1/2 tablespoons water for every 1 lb of ground meat (beef, pork, chicken, or turkey) and it's splashed over the meat as evenly as possible with the fingers... and then mixed all in evenly and letting it sit for 15 minutes before cooking it... And you can use any ground meat with lots of fresh ground fennel, garlic & onion powder and fresh course black pepper make for a quick tasty sausage... and I wait and Kosher salt to taste at the table

    Wow this is a must try recipe! When I don’t have the sodium citrate for cheese sauce, I just my grated cheese and some cream cheese to give the dish some creaminess. Thanks for sharing!

    Looks really good Brother. I used to hunt geese all the time. Haven't for a few years now but I miss it. Lots of fun too! Usually made goose burgers as well as pepper jerky. The jerky is really good! Best wishes

    I'm going to be sharing this video with Canadian friend of mine.
    Scott @Rambling With The Brum's.
    I might just have found him another recipe. So what is the ratio of baking soda to water to poundage of meat ? Or does it not matter.
    I know when trying to make your batter crispier you use baking powder which contains baking soda and the acids needed to activate it. Use 1.5 teaspoons baking powder per 1 cup of all purpose flour.
    That looks delicious.

    Ya know I’m wondering if baking soda water would help break down the toughness in round steak? Always have to beat it to death, not my favorite…. God Bless y’all! You’re all such a blessing 🙏🏼

      Oh my goodness yes….. I just had to appeal a poke berry video that got demonetized because I guess the AI thought it was blood? It’s crazy…… I’m constantly trying to come up with titles that don’t say exactly what I’m doing 😂😂😂

      I like provolone, sharp provolone is even better, but that's hard to find. Also Swiss cheese. The most common topping around here would be cheese whiz, I'm sure cheese whiz will kill you but it's delicious once in a while. Definitely a good way to use Canada goose meat. Seems like every place is over run with them.
