I love the potatoes skins. I cook a small potatoes for me ( loaded of course) and a big one for my husband. He doesn't like the skins so when he's done I put cheese and bacon on it and broil it. Top with sour cream and it's my desert. His loss.😋
I know you garden but have you tried growing the veggies you get from the grocery store? I grew lettuce from and green onions from old bulbs. I was pleasantly surprised how well it worked.
