    This looks so easy and delicious! I have pectin but don't have the calcium you mentioned. Curious what the calcium does? Thanks for another great video!

      Many pectins require sugar for activation, but if you use Pomona pectin, it is activated by calcium. It seems to be a better quality pectin.
