I've noticed that the "low-end" restaurants and establishments always have the best personalities. Something to be said for both but I always enjoy them a bit more.
Its cause the customers don't expect 5 star customer service. There for there less tense and relaxed then the 5 stars
Put another way, most of the super high end restaurants are expected to be highly professional. It kills whatever personality they might've had. I'm sure most of those people aren't as boring outside work
Because they love what they do and have fun making the food without the high end stress that comes with expensive restaurants that's why I love hole in the wall places

I’ve had similar dishes plenty of times, a peanut sauce ahi tuna. Obviously it won’t taste as good if it’s cooked tuna and straight peanut butter, but I could still make it taste amazing with a few tweaks
