For the chocolate truffles you will need:
226g 80% Cocoa Chocolate (use best quality you can find)
2/3 cup (160ml) Vegan Coconut Cream (use double cream for non vegans)
1 Tablespoon vegan spread (use unsalted butter for non vegans) softened to room temperature
1 Teaspoon Pure Vanilla Extract
Toppings: Unsweetened Cocoa Powder, Sprinkles, Crushed Pistachios
Nicolas, Many of us 'flying solo' is not new. Your video encourages everyone to celebrate oneself, every day, not must on special occasions. You remind my mother telling me, to sit up straight, elbows off the table. Sadly it seems that fewer folk are interested in having good manners these days, but living with grace and elegance never goes out of style. Sometimes we are so busy doing special things for others that we forget to treat ourselves with the same level of love and kindness we deserve.

I preferred Valentines Day when I was a kid not for the fact I am single. I am blissfully single not woefully single. But when you are a kid it seemed more of showing mutual respect for people in your life whereas as soon as you become a teenager or young adult like, who got a Valentines Day gift and who didn't, got to have a fancy dinner, or play in the sheets.
Yes, I somewhat agree. I admit to being an incurable romantic, but I think V Day has become too commercialized and "expected". Valentine, Shmalentine 😉😹😵💫,
In the Celtic Wheel of the year, generally speaking February festivals are celebrating leaving the long nights of December/January, and entering the threshold of spring, where the world is beginning to awaken from dormancy. Dinner parties with lots of candles to celebrate the emerging light, food to stimulate the palate (aka chocolate!), and flowers...it's so enjoyable from this perspective, no matter what. Blissfully single here and will be treating myself for Valentine's day! Love the book and will most likely order one. My truffles have a hazelnut wrapped in the center with edible gold flakes on the outside. So pretty! The melon ball thingy is just that, A Mellon baller! Happy Valentine's Day everyone!

I loved this video as always. I have not made truffles in several years. I do miss them. I imagine you narrating books Nicholas. If ever you do any audio book, a self biography, anything… I would be running to get it. Your dinner looked lovely. I could watch you folding napkins or setting tables all day long and never be bored! I would love a video on more decoupage, making an English breakfast, (I know you don’t have breakfast yourself really), but it can be a brunch, and perhaps a video on top 10+ essentials in life for anything or kitchen, bathroom etc.

Nicolas, if I could make one request, it would be for you to read some of the recipes from "The Secrets of Pistoulet" and then describe how one could put several meals together with the different recipes. The more you read...the better! The calm sound and elegance of your voice, coupled with the recipes, would make a fabulous video (in my humble opinion). Thank you, Nicolas. :o)

I iron my table cloths. After, I fold them once or twice lengthwise and hand them on pant hangers with clips. They stay increased and ready to use at any time!

Glad you demonstrated making truffles. They sound like something that could be intimidating to prepare but they really aren’t. The Secrets of Pistoulet intrigues me. My plans for Valentine’s Day consist of making Red Velvet coffee at breakfast and then making heart shaped sugar cookies which I’ll frost and decorate with assorted sprinkles.
Ive never heard of Red Velvet coffee, probably because my go-to is espresso lol. I will look it up, ty.

Nicolas, as always, a lovely vlog with good tips and how can one go wrong with a chocolate truffle recipe and book recommendation!? I purchased the book back in May 2021 because of your recommendation. It is a charming little book with lovely little stories and recipes. Worth bringing it up again. Do have a lovely Valentine's Day, whether with yourself only, with another or with friends.

I sometimes make truffles (have a traditional recipe that is just double cream and dark chocolate) but hadn't thought of using a melon ball thing. Very good idea - will buy one.

I have been alone for 21 years , since my soul mate passed. Valentines day never makes me sad. I treat myself to something sweet and buy myself a little bouquet for my small silver little pitcher. My market sells a single ,quite large slice of cheesecake that has been dipped in dark chocolate on the end, and has one chocolate dipped strawberry on the side! I look forward to that treat every year. As for candlelight... there is never a day that I don't light a candle. Happy Valentines Day Nicolas

I love the truffles! Totally making those this weekend now. I think I may use chopped nuts instead of sprinkles. The book is adorable. (We in America call the melon thing a melon baller).

I was thinking that finely chopped nuts would be a super choice for the truffles! I'd prefer that to the sprinkles, frankly.

Nuts are a good idea and also very fine shredded coconut works. The sprinkles are a tad juvenile and I find cocoa powder too bitter.
