I peel my bananas & put them in a ziploc type bag before freezing them. I have found it makes it easier when I’m ready to make bananas bread. Plus, this way, my kids can throw them into smoothies if they want.

My recipe is almost exactly the same as yours except I use chopped pecans and chocolate chips. I save my bananas in the freezer until I get enough to double my recipe. Isn't it delicious?!?🤗🤗 Thank you for putting this out there! I even use the turbinado sugar!❤️.
Hi Kristen! Love your videos. A quick note, the time bubbles for the bake times for the 8x8 and the loaf pan are flipped. I believe the 8x8 should take shorter time than the loaf pan.
thanks for sharing your frozen banana experience - I worry about using frozen fruit in baking but I'll have to try it now :) also love walnuts and chocolate chips with my banana bread!
I like that I can throw bananas in the freezer and not use any plastic. Try peeling them when they're still frozen - it's easy to run a knife through the peel and remove it before they thaw. No icky squeezing.

One loaf version: 3-4 ripe bananas 1/2 stick butter 1 cup sugar 2 eggs 1.5 cups flour 1 tsp baking soda 1/2 cup nuts Cream room temp butter with sugar, add eggs & bananas, sift in flour & soda, add nuts. Bake at 325 for one hour or until toothpick is dry. Do not cut it. Let it cool. Wrap it in plastic or place in airtight container and wait overnight. The top will get really sticky as the remaining moisture in the middle hydrates the whole loaf. I've been making this recipe since I was 8. It came out of a book called Mix Butter With Love, the first cookbook my mom had - a wedding gift. The specific technique at the end is mine. Oh, and I always cook in glass, greased and floured.

It's ok if it's not your cup of tea, there are other videos out there that talk really fast and get right to the recipe. Personally, I like hearing the extra stuff. So to each their own.
Quite hard to get my head round the over ripeness as they look, smell and taste stale. I so want to try it but I've noticed some bananas have a good banana-y smell and taste whilst others loose that nice smell and taste and this I have a problem with as every over ripe bananas are not equal. Tbh with all the other ingredients unit hides a multitude of yucky essential with these well over ripe bananas. The ingredients would make anything awful taste nice in my opinion. Therefore, this is just a vessel recipe to discard ones ready for the bin bananas. Sorry to say but the bananas are just too far gone you are using your body as a rubbish bin. I mean what is the nutritional profile when in this state? I bet it will be mostly sugar and surprised if you still get the other benefits like potassium and if this is the case then as I said you are using your body via this recipe as a ru bish bin together rid of the waste bananas. Without the bananas, the recipe will still stand up. Gonna do my own with spotted brown bananas and oats, no wheat inflammation causing flour, just healthy. Not sold on these over ripe bananas cos if you can't or wouldn't put those bananas in your mouth in that state, then why is it any better just hidden among ingredients hiding the taste. Not palatable at all.

I usually just put my bananas in hot water and they defrost very quickly
I just let my bananas defrost in the fridge from the night before and they're perfect for mixing and baking. Even if there's a little frost it's okay.
