We have a company local to us that sells flavored honey. It's good, but a little expensive. This looks good. We'll have to try making some. How would you infuse other flavors? Like blackberry, raspberry, or something else.
Any fruit has to be dehydrated or freeze dried so the moisture is out, then you can put it in jars, pour honey over and let it sit for 2-3 weeks. Or do it like the video and strain after before pouring in jars.

I would add the vanilla beans to sugar to infuse the vanilla with the sugar!
I have made vanilla bean sugar, so good.
Martha Stewart did a whole segment on flavoring sugars. It made lovely frostings for cake. Lavender worked well too.

Dried as the moisture content can effect the honey.
