Let's not forget she still wrote the lyrics all by herself and wrote the majority of the songs by herself (she wrote/composed 8/14 of the tracks for Utopia solo, and the rest were written with Arca). She is, for all intents and purposes, just as much of a musician, singer-songwriter, whatever you want to call her as she "used to be". To quote something she's said before, everything she does is for the music ("if I can do it through singing, cool/ whatever it takes to make a good song"). People forget that she's never thought of herself as a singer first and foremost and I think that's probably why she even bothers to include the majorly instrumental songs on a good number of her albums (the ambiance of "Headphones" and "All Is Full of Love (Album Version)", "Frosti", the old B-sides, doing not one but two soundtrack albums, one not even written necessarily with Bjork in mind and the other not really focused on her own vocal performance, the interlude bits on Volta, "Dark Matter" on Biophilia, the long outro to "Family" on Vulnicura and all of those parts that extend out just to focus on the instruments devoid of vocals, "Paradisia" and all of those similar moments on Utopia). She's no less a singer-songwriter literally or metaphorically than she ever was. I imagine the aesthetic parts of what she's doing is just to bring her work that much further. It's no longer just an album and an audible experience, it's a mind-challenging, thought-provoking, sensually-stimulating... thing! Like she was trying to do with Biophilia via the app and the musicology/scientific aspects of that whole era. Also, the lyric you said was wrong. It's "he reminds me of the love in me".

She replaced the back vocals with flutes and she love sing in rubato so this music can easily became a mess at live. I think all music in utopia is hard to keep the time because they are kind of chaotic.

In this live version i think she just sang it in rubato (free time) and the voice flow outside the tempo of the instruments.

I don’t like it when people compare them two just because Gaga is weird and eccentric just like Björk. But really, they’re two different people. Gaga is a pop/rock star artist and Björk is an eccentric visual artist. They’re both beautiful and are icons, legends!
