Great video but let me offer three friendly amendments. 1. You are in fact using the vodka as a solvent, but when you add water you are diluting the solvent’s potency - in this case by about 1/3. Better would be to macerate the blackberries in the vodka and add the syrup (sugar and water) after you have fully extracted all the flavor and color from the berries. 2. When you add the sugar at the beginning you are in fact leaving a significant amount of alcohol and flavor on the table. Better would be to add the sugar to the berries after you have strained them. The sugar will pull much of the alcohol from the blackberries and with it, more of the flavor. 3. These days it is possible to reduce the need to wait for two months if you use a sous vide heating device. You add the berries to the vodka and seal them in a jar. You set the sous vide in a water bath to about 150 F and you place the sealed jar in the bath for 90 minutes to two hours. The heat will extract an equivalent amount of color and flavor as an extraction at room temperature would take a couple of months.
