Glad to see you back in the ‘Sip Robert. You were basically in my backyard for this episode. I look forward to the next episode and everything else you do. You have done a great job highlighting the good folks we have around the Mississippi.
Now, little tip for anyone who wants to try a bit different way to eat crappie. Fried crappie is without a doubt delicious, but I want to share a little recipe I have been playing around with for quite some time.
First, get a nice thing of jasmine rice cooking, since it will take the longest time, once it’s about 15 minutes in, start cooking a nice mixture of veggies, like some tri colored peppers and onions, maybe with a little bit of broccoli florets thrown in at the end as well. Cook them at a medium heat until they all get a good brown edge, then drop them to low temp, cover and simmer.
Now, get your crappie filets, and a shallow pan. Put in a nice amount of butter, a crushed clove of fresh garlic, Mediterranean herb seasoning mix with Tony’s creole seasoning, and some bourbon brown sugar for caramelization purposes. I don’t really have exact measurements for this: I just eyeball it. Melt this all down and let the butter brown just slightly, then slide your filets into this mixture. It doesn’t need to cover the filets. Cook them at medium temp and flip after about 3 minutes on each side, and they should be done depending on the filet size. I like mine a little crispy around the edges personally, so the mix of seasonings, brown sugar, and butter really get a good caramelization to them.
Everything should finish right around the same time. On each plate, lay out a bed of jasmine rice, then put a nice amount of veggies on top. Then, lay a crappie filet or filets on top of this. Add just a little water to the remaining slurry in the crappie pan, and stir. This will make a nice little sauce that can be spooned onto the filets laying on the bed of veggies and rice.
It’s not exactly conventional, and you’ll end up with a decent amount of pots, pans, and dishes to clean, but it is very, very tasty. I’m sure someone with more culinary skill could add to this, and I welcome the feedback, because it’s still a work in progress, but I think it’s worth sharing, and anyone who tries it enjoys it as much as I do!
