Fantastic recipe! Came out nice and dense/slightly hardened around the outside with a soft inside! Not so soft like a breakfast biscuit but dense and soft like you would expect from a scone! The consistency was perfect! I didn’t have a circular cutter on hand so I manually used a knife to cut out the shapes, and some of the imperfect shapes looked more like triangles, which inadvertently baked into the shape of those triangular scones you see in stores… very cool! I did half the recipe, and while the lemon flavor came through in just the right amount (obviously lemony, but more on the subtle side), the sugar amount seemed too little. I’ll have to try again to double check that I used 2 TBSP and not 2 TSP by accident, but I’m quite sure I correctly used 2 TBSP (remember I halved the whole recipe). So I felt like the scone couldn’t stand alone on its own, but when we paired it with strawberry jam, suddenly it was perfect. The jam added the sweetness we felt was missing, but the lemon flavor came through and stood out nicely. Anyway this is just my reaction after a first attempt, so thought I’d share for anyone else that comes by. I’ll double the sugar next time and post an update when I do!
