    Citric acid may make the sugar cool slower but also, without it you would barely be able to taste the flavor no matter how much flavoring you put in. So that bit where they say now it tastes great is a lie, it's just scented sugar.

      Well here we have the traditional rock candy, sold often in lots of coastal towns e.g. Brighton and Blackpool hence the name Brighton Rock or Blackpool Rock. Crystallised sounds really cool though!

    The professionals at lofty pursuits would definitely have some things to say about this, one-using a white coloring for a candy they are pulling is a waste of time and money, pulling turns the sugar opaque and white anyway, second using citric acid with a marble table is not good, citric acid eats marble and they didn’t cook the water out of the coloring so the candy will end up a bit sticky

      Riley Summers as a person from the video (that ugly guy with black hair) who made the entire batch I can ensure it turner out just fine :)
      And I can partially agree with the white colouring part - the batch was 12kg (+4kg of glucose) and as you can see the whole thing was done only by using hands, no machines included. Adding white colouring helps a lot with such large amounts, but indeed - we could have stretched it without it too :)

    Rock candy or candy glass from my childhood is made by boiling white sugar corn syrup water together until the sugar is dissolved flavorings and food color is added stirred well poured into a lightly oiled rimmed baked sheet and smoothed out into it resembles a pane of colored glass dust lightly with confectioners sugar cool completely and break into bite sized pieces cinnamon peppermint clove and various fruit flavors like cherry apple or grape are popular flavors never tried the kind with crystals on a stick don't know if anyone makes old fashioned rock candy /candy glass anymore
