I just scoop of the mold layer, assuming its just floating on top? Use a chopstick if'n you cant reach down in. Syrup underneath should bee fine, if it tastes bad, compost it. Otherwise, keep it in the fridge.

Hi to your sweet boy. I had no idea it was so complicated. I have a light brown mold forming on a jar of syrup I have. Is it ok?
If the inside looks moldy I wouldn't eat it. When you can syrup it needs to be full and a certain temperature otherwise it will create mold over time.

The sap should run for another couple weeks. We paid 10k for our evaporator in 2014, expensive.
