note: use Japanese Soy Sauce (I recommend Kikkoman brand) and all measurements are for FULL SODIUM soy sauce.
Perfect Seasoned Sushi Vinegar🍃🍃🍃 (for 4 cups raw sushi rice)
2/3 cup Rice Vinegar (or White Vinegar)
2 tsp Salt
1/4 cup Sugar
bring to a boil while whisking. once boiling remove from heat and keep whisking until dissolved.
Vegan California Roll🍃🍃🍃
Vegan "Crab" Meat
1/2 block EXTRA FIRM Tofu, baked at 400 degrees for 30-35 mins, then shredded
3 tbsp Vegan Mayo
1 heaping tbsp Sriracha
1/2 tsp Salt
1 tsp Sugar
roll with cucumber and avocado.
Vegan Sushi (Nigiri)🍃🍃🍃
Eggplant Sushi: I used half of a large Chinese Eggplant. Bake Chinese Eggplant at 400 degrees for 30-35 minutes
Tomato Sushi: I used 4 large tomatoes. Boil 3-5 minutes depending on size of tomato, then transfer to ice bath, peel skin, slice, remove seeds
marinate both of these in 2 tbsp Olive Oil + 1 tbsp Soy Sauce
(depending on size and amount, you may need more marinade, but keep this 2:1 ratio Olive Oil to Soy Sauce)
Mushrooms: I used Shiitaki, King Oyster, and Enoki. Cooked half of them in 1 tbsp Sesame Oil + 1/2 tsp Salt and cooked the other half in 1 tbsp Olive Oil + 1 tsp Soy Sauce.

1/4 cup + 2 tbsp Soy Sauce
1/2 cup Mirin
1/2 cup Sugar
Slice of Ginger
2 tbsp Cornstarch mixed with 2 tbsp Water

1/2 cup Vegan Mayo
1/4 cup Sriracha (for more spicy, 1/3 cup sriracha)
1 tbsp Maple Syrup
The Eat More Plants Official VEGAN TEMPURA BATTER🍃🍃🍃
1 cup Cake Flour (also called pastry flour)
1/2 cup Potato Starch
1 Vegan Egg
2 tbsp Follow Your Heart Vegan Egg Powder + 1/4 cup Ice Water
1 1/3 cup Ice Water
Fry at 375-400 degrees.

1 tbsp Mirin
1/2 tbsp Pickled Ginger
1 tbsp Pickled Ginger Juice
1 tbsp Maple Syrup
