Ingredients Butter Sponge ▢ 125 g / 4.5 oz unsalted butter , softened ▢ 1 cup (220g) caster sugar ▢ 1/2 tsp vanilla extract ▢ 3 eggs , room temperature ▢ 1 3/4 cups (260g) flour , plain/all purpose, sifted (Note 1) ▢ 3.5 tsp baking powder ▢ 1/2 cup (125 ml) milk (low or full fat) Icing ▢ 4 cups (480g) icing sugar (confectionary sugar), sifted ▢ 1/3 cup (22g) cocoa powder ▢ 1 tbsp (15g) unsalted butter ▢ 150ml (1/2 cup + 2 tbsp) boiling water Coating ▢ 3 - 4 cups desiccated coconut Optional: Jam and Cream ▢ Strawberry jam ▢ 1 cup (250 ml) cream ▢ 1 tbsp white sugar Instructions Butter Sponge Preheat oven to 180C/350F (or fan forced 160C/320F). Sift flour and baking powder together. Grease a 20 cm x 30 cm / 8" x 12" cake pan. Line with baking paper (parchment paper), leaving an overhang on all sides (to make it easy to remove). TIP: Gently rub the butter into the flour, you’ll want chunks of butter rather than the mixture resembling breadcrumbs. 90 g Butter Pour lukewarm water and an egg into the mixing bowl and mix together. You may need to bring the dough together with your hands. 250 ml Lukewarm Water,1 Egg Then cover the dough with cling film and leave the dough to rest for 30 minutes. Lightly flour your work-surface and place the dough on top. Roll your dough into a long rectangle shape, then fold the two ends into the middle. Then close the dough together like a book, repeat this step 3 to 4 times. Place the dough back in the mixing bowl and cover with cling film. Leave to rest for 30 minutes. Kay, how about making chicken tenders in your air fryer with chips? Recipe: slice chicken breasts into strips about 1-2" wide . Beat 2 to 3 eggs (depending on how much chicken you're making) in a medium bowl with 1 TSP each of salt and pepper. Pour seasoned bread crumbs in the cool new orange bowl. Dip the chicken first in the egg, then coat it with the bread crumbs and place in the air fryer basket. When you've coated all the chicken with egg then bread crumbs, lightly spray them with either baking spray or olive oil and bake int he air fryer until golden brown. You can make your awesome chips and even make a dipping sauce of equal parts honey and mustard. I think you and Lee will find this gorgeous. :-)

RECIPE ALERT; Kay, hear is an extremely simple recipe i will call ASIAN PORRIDGE. Rather than using oats, this recipe uses rice. Place eight cups of water into a lidded pot for boiling. only when the water is boiling do you add one cup of rice. Mix the rice in and turn the heat down as low as you can to keep the water at lowest boil. after 30 - 40 minutes, whisk the rice for TWO minutes. This helps break apart the rice into a creamy consistency. After 50 minutes, add frozen peas, chopped onions. Cocktail onions work good too. Add some tiny cuts of meat such as chicken or fish. spoon sized meat so a fork is never needed. Add seasoning of your choice such as salt, pepper. Allow that to continue cooking for another ten minutes to warm up the peas and cook the meat. Using a lid is important because you don't want the water to boil off. The Asians call this Congee but porridge is the English equivalent. Serve in a bowl, enjoy with a spoon. Very soothing and good for any time of the day.

you can cook the spud cakes first then set it aside on the plate then cook the sauce and put it on top of the spud cakes
