Chris Cooking Nashville is a cooking genius and a very sweet guy too and his wife has just as much talent in her music! I hope they stay around social media for a while ❤ I told my hubby Chris does culinary things with such ease which reminds me of Wolfgang Puck. It’s a rare quality.
I can't believe it!!! I've been looking for a recipe such as this for a while due to the fact that I crave refried beans at least once a month. I've been on keto since 2020 & have lost a total of 95 lbs and have gone from a size 20 pants to a size 3 (which fit very loose). I was labeled obese for years and was diagnosed type 2 diabetic in 2014. My sugars are now normal and I have the energy I had at 18. I'll be 54 in April. I attended an all-school reunion August 2023 and the women that knew me my entire life did not even recognize me. I had to introduce myself. Lol

Chris is a culinary genius. Even he says he doesn't know where some of his ingredient ideas come from.
Yum, I am definitely making these nachos. When I made the mashed eggtatoes for the first time there was an underlying egg taste and Chris said if you let them set overnight the eggyness will disappear, it totally worked. If these are a bit eggy, I bet leaving them for the next day would solve that problem. Thanks for reviewing this recipe for us to see.

I’ve made this twice since Chris posted-terrific! In UK Bologna is hard to come by but I ordered no sugar/no pistachios Mortadella and it works a treat. 😀
I remixed Chris cooking Nashvilles carnivore mashed potatoes with less effort and ingredients. I was amazed how egg whites could taste so close!!! Chris using egg white was “fat head dough” worthy for our community!!!

18 hard boiled eggs(remove yoke)
3 tbsp butter
2tbsp HWC
2 oz cream cheese
2 tsp Garlic powder
1 tsp salt

Chris is a gourmet chef extraordinaire. And a super nice guy too.
The recipe looks really good. My wife and I eat nachos each week. To speed up the process we put the sour cream in a plastic baggie and cut a tiny piece off the corner of the baggie. Now the sour cream is easy to drizzle over tacos or dab on each nacho.🌮
I have all the ingredients to make this. Once it's keto twins approved I'm a go!😊

I saw one of Chris' vid the other day for potato salad, he said that if it still tastes like eggs, keep cooking until the eggs looked dry. Not just until there's no liquid in the pan. That might help.

KT's: Try this alternative: boil jarred Lupini beans for 2 hours in water with your favorite flavorings
(i.e. - Taco seasoning / Cumin / Lawry's / etc...); puree the drained beans, season to taste, ENJOY! : )

My family has had tostadas once a week for decades. We fry the tortillas whole, smear them with a bean, spiced hamburger mixture, garnish as desired. Try it, its easy.
I think I am a bit too lazy, but Chris is a kitchen wizard, so I may have to try this. I like balogna.

If you add equal amounts of red, yellow, and blue food color drops you make brown. Not sure if it will be TOO brown with this given amount, but there’s that.

I agree about his carnivore rice. It is fabulous. We have only used it as white rice for Keto Cajun dishes or Indian dishes and it is so good. His new Fried rice video is going to take it over the top and it’s not nearly as hard to make as it may sound and is so worth it. Maybe you could test the fried rice recipe. Great review as always. 😋👍

I skipped the extra egg white powder and microwave step and got no egg taste at all. Texture was just fine to me. I did use smoked paprika for the paprika and added some New Mexico chili powder. Skipping the extra egg whites and microwave step was easier, enabled reheating, and was just fine texture wise.

You Girlies ♥are missing out on mustard fried all-beef bologna sandwiches (on Sara Lee's white keto bread). Both at Walmart and I'm soooo stoked to try this recipe! I could be tortured with an egg white period dot come and those "umbilical cords" .....they were killing me to see in the pan, so I'll kindly remove mine. I feel your angst over eggs!

I used bacon instead of bologna and didn't use cream cheese cause my son can't have dairy...also used a non dairy cream cheese and it worked out wonderfully..

I whole eggplant minus stem end and 12 oz chorizo in a pressure cooker then purée makes wonderful refried beans replacement
I follow a Carnivore way of eating when I want to drop weight. I like the simplistic way of eating without counting or actually thinking. I normally do Ketovore & that’s when I get to cook a bit more creatively. I can’t remember when I’ve bought bologna last but Interesting recipe to say the least. Probable BEST thing is you won’t get the 🌬️🌬️🌬️🌬️🌬️I know you’re part Scottish as am I. I had to make Haggis this week ( in a bagpipe band & was Robert Burns night) & was pretty Keto except for the oatmeal………

I love how you make these more complicated recipes look "doable" for average cooks! Thank you for your recommendation on Hero tortillas. I've tried making a few tortilla recipes out in the Keto world and they don't quiet do it for me. Looking forward to making tortilla chips and perhaps cream cheese "wontons" with these.

Years ago there was a restaurant at Howard & Paulina called La Chosa.. wonder if your mom went there. They called these Kamoosh! we used to order kamoosh for 100!! an old favorite!
We actually lived around there when we were young, my dad owned a bar called Fiddlers Green back in the 80s, I’ll have to ask her if she knows what restaurant you are talking about ;)

Since you were talking about mashed potatoes, the carnivore friend of mine swears by their gravy and it’s basically just heavy cream and cream cheese, and then they spice it like a country gravy. 🤔

What temp is your oven for baking the chips made from tortillas?
We do 350% until golden, although I like deep fried the best
I miss the flavor of corn in recipes
If you are missing corn, you may want to look at canned organic baby corn which has significantly less carbs than traditional sweet corn. I found a few recipes from chef-michael (Michael Silverstein) where he has a Corn Pudding on his web site, and a Keto Cornbread in his New Comfort Cooking cookbook. I'd call this "technically keto"!😉
