Roasted Butternut Squash Soup

  • This deliciously thick and warming soup will be deliciously warming and filling .
    I tried out a hack I'd seen for making cutting a butternut squash easy . Sadly it didn't work for me .
    No need to peel the BNS , the peel helps to thicken the soup and of course adds extra nutrients .
    Use a good quality vegetable stock to keep a good flavour profile .
    You can of course just cook the vegetables in the stock but roasting them gives a much better depth of flavour , after all food is all about flavour .
    Do roast the seeds even if you don't use to garnish the soup they make a great tasting snack .

    Thank you Penn for another great vlog I like butternut squash but have trouble peeling the squash so I am going to try this recipe hope you are feeling well and Steve is still improving take care keep safe best wishes Sheila and family

    I would really like the soup. You are right, roasting the veg first really makes a difference. I have trouble cutting the butternut squash. Arthritis strikes again! Like the idea of roasting the seeds. Thanks Penn. X❤

      Chrissie , i was really hoping that the hack would work . I was gutted that it didn't . Roasting the seeds is great , they make a fab addition to the soup and a really good snack

      Just home from s, burys penn,great points to be had again.
      I often need my son to use a saw to cut ours,lucky to have an organic friend who gives us the odd home grown,mostly the type known as a turks head? or hat shape in all colours ,but as thick x hard as concrete 😮
      can't beat a roasted squash,and can taste like meat with a few herbs.

      I think I should have made soup today but as its St. Georges Day, I'll be having a nice toad in the hole
