@@Seki1987 Ajvar is good, but it's not a sauce. The pepper sauce they talk about is completely different, and besides red peppers, has nothing in common with the condiment. The sauce is creamy and rich in flavour, very unique taste. You should try it.

For anybody interested, add a few Calabrian chilies and a few ounces of pecorino to the sauce which completes the recipe from his full video without the sausage; it’s not overkill at all the Calabrian chilies give that mouth-numbing feel that just makes it incredible!

I really like the speed of the short and the cuts. Plus the music it's sort of soothing. A lot of cooking shorts are so fast it makes me uncomfortable. Well done 👌
I have a lot of pasta in my repertoire and since we have found this my wife says it’s the best one and it gets requested once a week. If you haven’t made it, put it on the short list. Techniques are super approachable and the result is stunning. Not too mention the left overs are bomb. My only suggestion is our preferred pasta shape for this sauce is SFOGLINI Cascatelli. Lots of toothy-ness and has ridges to pick up the sauce.
This sauce is RIDICULOUSLY addicting. I make myself a batch and eat it for lunch and dinner every day until it's gone. Thank you for sharing this with us Stephen. Everyone always asks for tupperware to take some home when I make it
I am SO happy to see you actually roasting your peppers and not just charring them on the fire like so many chefs do. Roasting them really brings out the flavor and sweetness and softens the pepper. You know that the onions and peppers you made is called pepperonata and is itself a great side dish. 😊

I do this all the time, instead I roast the onion and garlic with the peppers, add a handful of chopped cherry tomatoes to the roast. Won't lie, his preparation looks better, but good none the less
Just made this without sausage but it is by far the best sauce I have ever had I could eat it by the spoon full and be satisfied but I'll definitely be trying it with sausage

I love that lady! In all seriousness though, the bell pepper sauce is nuts. I didn't think food at home could taste so good, so don't count it out. I use it with chicken instead of sausage, but I'm sure it's awesome with sausage as well (since I regularly make Italian sausage with bell peppers seperate).
I’ve made your roasted red pepper sauce before and cooked it with pasta and sausage. Possibly the single best sauce I’ve ever tasted, but it gave me DEFCON Level 5 heartburn all night. Next time I make it will be for lunch, so I have all day to burp before bedtime. Great food is worth suffering for. ❤️

The stacked pasta was excessive (see noodle structure collapse at bottom), but kinda fun! Looks absolutely delicious and love the method. I'll have to try another red pepper pasta. Last time I did, it was a hit!

You can roast all those veggies in a pan and blend together with a few spices to make a basic romesco sauce and store it for a good week or freeze for long use. Then add everything extra seen here when you want some. Great recipe btw. Romesco sauce is a must try. I recommend going out and finding some to try prior to taste the pallet.
Should've just left the peppers as is, looked amazing before blending. Would've put a little more texture into the dish as well, whilst keeping the flavours as is. 'Nuff said..!

I made a vodka sauce pasta for my soon to be in laws at the time and they were shocked a man could cook and they said, "you're a firefighter, where did you learn this?", lol we cook most of meals at the firehouse and I learned how to cook pretty well, especially for a large group of people

I love roasted red peppers for sauces, been doing it for years. My favourite pepper for it is a spanish variety called piquillo pepper, delicious.
Such a pleasing presentation. I expected a plate dump and got a pasta cube.
I was more impressed with the fact he plated it and just didn't scoop it out onto the plate which is what I would of done 🤣
I imagine it's quite a sweet sauce with those roasted peppers in there and balances the sausage and cheese perfectly.
This was one of the most interesting and unique pasta dishes I’ve ever made. Highly recommend.
