  • Sichuan Dan Dan Noodles 担担面 is the ULTIMATE Chinese noodle comfort food. It's ranked as one of the top 10 top noodle dishes in China. It's spicy and numb flavors are extremely unique to sichuan province and you will LOVE this dish.
    my hot oil recipe:
    • Chinese SPICY Hot Chil...
    Meat Part
    6oz Pork or Beef
    1 tsp ginger
    White part of scallion
    2 tsp oyster sauce
    2 tsp cooking wine
    2 tsp dark soy sauce
    Sauce
    1 tbsp dark soy sauce
    ½ tsp chicken bullion or salt
    ½ tsp chinese vinegar
    ½ tsp sugar
    ½ tsp peppercorn powder
    1-2 tsp sesame paste
    2 tbsp hot oil
    4-5 oz noodles

    My daughter tried to make your hand pull noodles. They didn’t come out right but at least she’s experimenting and learning to cook.

      @@JasenBerger well yea they are used for different things like ramen uses ramen noodles, pho uses rice noodles and these chinese dishes use Chinese noodles

    Just tried making this after coincidentally & curiously picking up sesame paste on the last Asian store run. So, so good. Finally a dish that can be made at home that’s as good as any made in an authentic (ie not just the sweet & sour, etc) Chinese restaurant. Soooo good. 🥰 Thank you!!! 🙌

    For the longest time I couldn't figure out what that amazing flavor was in the dishes we got from our local Sichuan restaurant... it was chinese vinegar! I can't wait to make this!

    I love the numbing! I use mushroom soy sauce for a thicker and darker dish. I was so happy when that entered my life.

    I love Chinese black vinegar and there is no substitute....black vinegar has its own special taste.

    I made the meat part of this and added garlic (over rice because no noodles or half of the ingredients for the other sauce), and the sauce was so good i used a piece of bread to get the rest of it out of the bowl i mixed it. I also had to restrain myself from eating the bowl of ground beef like a bowl of cereal.

    Planning on making these at home soon. I used to make them in a restaraunt. They also used Tanjin preserved vegetables. Also for the greens they would use cold pickled greens. A really great compliment to everything.

      That being said I live in a culinary void. Any chance you can get all the ingredients somewhere online?

      @@rudibmd It depends on how void it is. Can't get oyster sauce? Add more soy sauce, sugar, and vingar/worcestershire sauce. Can't get fresh? One and a half times to doubling the dry powder version works in most cases. It really depends on what you are missing.

    Went to Shang Noodle here in Las Vegas after you went there oh my gosh I ate the Dan Dan noodles, my girlfriend had the noodle soup! Even her 5 year old daughter scarfed.
    down a small bowl of noodles and loved it..the waiter said he was glad their restaurant got the 5 year old seal of approval!

    for people looking for sesame paste and can't find it, look for tahini available in most grocery stores and some health food stores as well.

    If you can't find the asian sesame paste, tahini can be used and it is usually available in grocery stores.

    Dark soy sauce is not only darker, but it has some sweetness to it. So usually, if you only use the regular soy sauce in place of the dark soy sauce, you should add sugar as well.

    Kenji Lopez-Alt recommends subbing chinkiang vinegar with 1/2 balsamic, 1/2 white rice vinegar. Still not a perfect match but significantly better than straight balsamic and since I live in an area without a decent Asian market, I've used it and it's not bad.

    Making this soon looks delicious . Usually cook my noodle dishes on Sunday .Steak and home made ramen with dumplings and egg rolls or spring rolls and I've discovered Kimchi fried rice and Zha jiang Mian and love both . I'm always looking for ideas . I love Sundays lol

    I just tried making this and found it a little salty, i may have made a mistake somewhere. I'm in Australia and used our Aussie spoon measurements I also used a premium soy sauce (I'm not sure whether it was a dark soy sauce), but will definitely try making it again along with many of your other dishes now that I've discovered your channel. 😋😋

    I was able to find the dan dan noodle ramen that you tried at 7-11 on amazon. They are so good but so expensive. It’s like a once a year purchase. Which is such a bummer they are good
