CRAB CAKES
1 Onion
1 Green Bell Pepper
2 Sticks of Celery
3 Cloves of Garlic
1/2 Stick of Butter
1 Bunch Green Onion
1 Palmful of Fresh Chopped Parsley
1 lb Jumbo Lump Crab Meat
2 Egg Yolks
1/4 Cup of Mayonnaise’s
1 Tablespoons of Dijon Mustard
1/2 Tablespoon Worcestershire Sauce
1/2 Tablespoon Hot Sauce
1/2 Tablespoon Cajun or Creole Seasoning
1/2 of Lemon Squeezed
1/4 Cup of Seasoned Bread Crumbs
2 Eggs
Panko Breadcrumbs
Start out by getting a large pan heated over med/med low heat.
Chop the onion, bell pepper, celery, and garlic.
Melt the butter in the pan.
Add the chopped vegetables sautéing for 10 minuets.
While the vegetables are sautéing, chop the parsley and green onion.
After 10 minuets, add the parsley and green onion to the pan. Sauté for another 10 minutes, or until all vegetables are very tender.
Once vegetables are very tender, remove from pan into a bowl.
In a large bowl scramble the 2 egg yolks.
Next add the mayonnaise, mustard, Worcestershire sauce, hot sause, Cajun seasoning, sautéed vegetables, lemon juice, crab meat, and breadcrumbs.
Gently fold mixture with clean hands.
Once the mixture is blended evenly, you can begin making your crab cakes.
With this amount, you should be able to make 6 crab cakes around the size of a hamburger bun. Make sure you us some kind of tool that helps compact them. I use a biscuit cutter.
After you’ve made all your crab cakes, cover them, and move to the freezer for 1-2 hours.
Just before removing from the freezer, begin heating about a half inch of oil in a large pan over Medium/Medium High Heat.
At this point you’ll need two separate bowls. One with two raw eggs scrambled, and one layered with Panko Breadcrumbs.
Dip a crab cake into the egg, and then batter with the panko. Set aside.
Carefully drop crab cakes into the oil one at a time. When you begin to see the sides turn a golden color, that’s when they’re ready to flip.
Once both sides are golden, remove crab cakes from oil, and set on a plate layered with paper towels. Let cool for a few minutes.

I just tried this recipe and I’m a Maryland crab cake guy. All I can say is Maryland we have some competition 😊. They were absolutely DELICIOUS. The Dijon muster was an added twist that I wasn’t sure of, but WOW! A crab cake without using Old Bay, never thought it was possible. I’ve tried many of your recipes and they don’t disappoint. This one by far is at the top of the list.

I have one just like it that came from my grandmother's sister, it's a workhorse for sure, a Brillo soap scrub would clean it up nicely, it's like a 64 Impala in the pots and pans world.

I would probably skip the last step of breading them since they already have bread crumbs in them and bake them. But they do look yummy.

Six patties at about $8.00 per patty. $30-40.00 worth of crab meat, plus all the goodies that it takes to put them together. But boy,...are they tasty ! What used to be a poor man's dish, has now become a rich man's game. Too bad we don't live in an area that crabs actually grow and are plentiful ...LOL ! Now don't get me all cranked up about the price of crawfish.

Even in Louisiana there’s over 1000 different gumbo recipes.
Maryland doesn't have a lock on crabs,....especially Blue Crabs in the south. We do things just a bit different than you folks on the East Coast.
Couyon goes on a regional cooking channel and tells the presenter that isn't how "they" make crab cakes up there in Maryland, and there can be no other way. Good grief. I don't understand food snobs. How boring if there were one and only one crab cake recipe in the world. Somebody has been snorting too much Old Bay.
