To keep its color. I actually whip the egg whites alone first then with icing sugar to build and hold volume then add on the coconut. Your oven should be ready by that time to bake them before they deflate. It takes 30 minutes for egg whites to start deflating. For white cookies.. use a deep narrow scoop to scoop them on the baking sheet.. and bake them with the oven’s lower heat alone first, once you see a golden tint rounding the bottoms turn it off and open the upper heat to finish baking. They will touch a bit of gold but the sides stay cloud white. 😍
