    I made these a few nights ago and served them with chickpea pasta and Jill's zucchini lasagna! The texture and flavor was excellent!!! I froze half of them - always so nice to have something of Jill's in the freezer for the days when leftovers are all you have time for!! Thank you, Jill!!!❤

    I’m 3 weeks into WFPB. I’m so thankful to have found your channel! Thank you so much for all of your amazing recipes that are so easy to follow! Made the zuppa toscana and shepherds pie already...Both delicious! Looking forward to trying this recipe!

    WOW! I went WFPB about one year ago and have tried numerous recipes for gluten free plant based meatballs - these are by far the BEST!! Great flavor and amazing texture, especially after they "rest" overnight. They are great with a marinara sauce and also with a nice vegan gravy. I also appreciate they use buckwheat, which I find healthier and quicker to cook than brown rice. Thank you Jill for your wonderful YT channel and website and the great work you are doing - time for me to become a supporting member.

    These meatballs remind me of my Aunt Anna and her Italian Wedding Soup. She would make dozens of tiny meatballs to put into the soup, what patience she had! This recipe would be a way to adapt her soup to a WFPB diet. I've been thinking about making that soup with vegan meatballs and gluten-free soup pasta. These meatballs would be great in it!

    Hi, Jill! Your bread recipe has been a staple in my diet for 2 years now so you could imagine I have eaten it with many things. I love toasting it and dipping it in hummus or making "French toast" by toasting it and putting maple syrup over it. And, my absolute favorite thing I do with it is make pizza bread. It occurred to me one day while eating my pizza bread that with the marinara sauce on it, it seems like a meatball! Albeit a bland one, it has that same bite and texture to it! Maybe putting the spices into it would really make it like a meatball. I have to use chia seeds in the bread instead of flax seeds because I am allergic to them, so maybe that's why the texture is the way it is.
    The other go to recipe of yours I make very frequently is the cauliflower pizza crust, but with ground chia seeds. So, so good!

      I just tried to find it myself and don't see it. Hmmm... Jill, did you have a recipe for that? Maybe I found that somewhere else. It's been a while back so I don't remember. I thought I had asked you about using chia seeds instead of flax seed because I am allergic to flax seeds and I remember you answering me back quickly as I was shopping for the ingredients in the store at the time.

      You can probably use vegetable broth/stock if you wanted. It won't be exactly the same but they'll still taste great :D

    I love your recipes! When I make them, I do add olive oil. I have heard to little oil in our diets can lead to dementia problems later on.

      l tried to grind flax seeds in the mortar - what a laugh. Spice/coffee grinder all the way!

    ... Pasta is so much better when you finish the pasta in the sauce in a skillet then plated … That way the pasta is infused with the sauce making for a better product… And of course those meatballs will taste a lot better if you let them cook in the sauce for at least 15 minutes… But it's a very nice recipe...SONO BUONI❗... God is good ...🇺🇸

    I have never eaten or cooked mushrooms in all my 70 years, but I trust you so much I am going to try to make these meatballs. What kind of mushrooms should I buy, and do I get them fresh from the produce department?

      Use fresh chestnut mushrooms. I call them brown mushrooms. I think the flavour & texture of those mushrooms would better suit this recipe. Mushrooms have vitamin D & Copper in them - good for your bones. Hope this helps you and your day is good for you.

    Hmmmm - - I could see this recipe being pressed into muffin tins for something a little less roly poly on the go. Then it occurred to me that it might make a good "meatloaf" recipe too ???

    Jill these look delicious and I plan on making . Curious, can these be baked half way in the oven then cooked the rest of the way in the tomato sauce to be enhanced with the sauce flavors like a traditional Italian meatball?

      I'd like to know that too. I love tofu myself, but we have some with soy allergies in our household, so tofu is out for family meals.

      I use shelf stable cooking wine since I don't drink. People who drink wine find this blasphemous, but I've never had wine so it works for me and I think it tastes delicious in recipes.

      Unless you're really dedicated to a whole foods plant based diet, it may be easier to buy meat replacements from the store if you still crave meat and transition to WFPB later. Gardein brand makes a meatless meatball and meatloaf, Trader Joe's does as well. This type of recipe won't taste like a meatball you're used to.

    Thanks for your recipe. But lots of the ingredients you use are really bad for your health. I have seen lots of tofu (soy feeds pathogens), nutritional yeast (has msg naturally forming on it, even if it says it doesn’t have any), brags liquid amino acids is not good for you either. I really suggest you get the Medical Medium information... a lot of people follow your recipes so I think you have a lot of responsibility. You are really a nice person and I hope you get my comments on a nice way.

      Hi Monica, we appreciate the feedback but we get our nutritional guidance from folks like Dr. Michael Greger at Nutrionafacts.org and Dr. T Colin Campbell. Tofu, nutritional yeast, and braggs aminos are fine based on everything we have researched and can be part of a plant based diet.

      I know all the science and literature out there. I have been plant based for over 21 years. The fact is that I got so sick following those guidelines I almost died. I have been surviving following the Medical Medium protocols and information, that is why I am suggesting this information, with much respect.
      I have promoted your channel and what you do in plant based nutritional course in ECornell, because I really like what you do. But, In those courses they tell you to not eat that much fruit and in my case (and many other cases) fruit has brought back to life people, just like me. That tells you how lost science is in many ways. I hope you don’t have to live through what I lived. And I hope you check out the MM information for guidelines in what foods to eat and not to eat. Thanks for your response and I have much respect for your work.
