I like the idea of cooking the potatoes ahead of time. I would probably cook off the spam too with the onions. I like caramelized spam.

I still use the type of can opener that leaves no sharp edges even on my zip top lids. They are easier to get every last bit out of the can, and easier to rinse for recycle with no injuries. I have gotten cut too often myself grrr. This helps my mom who is on bloid thinner and cuts are a risk to her. And the edge being smooth saves a lot of scraper damage.

Thanks for the tip about baking the potatoes the day before I never even thought about that and my family does like scalloped potatoes and au gratin potatoes with all kinds of meat additives including hamburger. And yes we like spam in there too

I had never thought about using baked potatoes ( I am going to do the baked potatoes in my crock pot today to use for my Spam in scallop potatoes), use I also use cream of mushroom soup also in my scallop potatoes

I have all of those ingredients to hand. I think I would put more Spam in though, you seemed to only put about half a can, say 175-200g, a whole can here in England is either 200 or 340g. We also have what is called 'Pork Lunceon meat' either in similar sized cans or sliced on the delicatessen counter which seems to be similar to Spam, which I understand to be 'Shoulder Pork and Ham'.
I like the idea of baking the potatoes first, rather than par-boiling.
