This broccoli salad combines indulgent and healthy, crunchy and creamy, light and fulfilling all in one tasty bowl.
It’s our interpretation of the classic broccoli salad recipe. We use almonds and sun-dried tomatoes instead of sharp cheddar cheese and bacon bits.
⭐️ Ingredients
2 heads (680 grams) broccoli, about 1½ pounds; cut into small florets and stem chopped into small pieces
½ red onion finely chopped
½ cup (50 grams) dried cranberries
¼ cup (35 grams) almonds chopped and toasted
¼ cup (35 grams) seeds of sunflower or pumpkin; toasted
½ cup (70 grams) sun-dried tomatoes in oil optional; chopped
BROCCOLI SALAD DRESSING
½ cup (120 grams) vegan mayo or your favorite mayonnaise
½ cup (120 grams) Greek-style yogurt
2 tablespoons (45 grams) apple cider vinegar or more to taste
1 tablespoon (15 grams) sugar or maple syrup
1 teaspoon salt
¼ teaspoon black pepper

🌷 Excellent recipe! ps: it’s now a fact, they have found out that the STEMS of broccoli have 10 times the nutrients of the florettes! (I usually tossed them into the compost- not now)
I use the stems for soup!
I love *crunch* they have always been my favourite part of that veg to eat.
After cutting some of the skin,it's the best tasting part. I use to chop really small and add it to spaghetti sauce for the kids. They didn't know it was healthy😂❤❤

Why are you having green veg if you’re supposed to be low oxalate?! Jesus Christ, just avoid them altogether and focus on fruits.

I had this salad at a restaurant minus the sun dried tomatoes. It was delicious. I've made it at home since but with sunflower seed instead of mixed nuts & sugar instead of maple syrup

I used to make something like this and it was a hit at potlucks, baby showers etc. I'd add, raisins, sunflower seeds, crumbled bacon, shredded sharp cheddar cheese, red onion. The dressing was a combination of mayo, sour cream and red wine vinegar which in the end tasted like strawberry yogurt. So good!!

@@GiovaniCapitanio it’s up to you. You can definitely eat it raw just like it was suggested in the video, but if you like more pronounced taste of broccoli, you can quickly steam it. Either way this salad tastes great

My mom taught me this recipe, its great. I also sometimes add a bit of shredded cheddar cheese, not too much. Also bacon bits are a good addition.

TRY IT - I kid you not, this thing is drop dead delicious. I tried it last summer and now my whole family begs me to make it at least once a month if not more often, especially if we’re having friends over for lunch or a Bar-B-Q.
TIP: I just use one kind of nut and I don’t toast them. I either use just chopped hazelnuts or walnuts but when my youngest son is home, I use just pumpkin seeds because he’s got a nut allergy. Either way you choose to do it, it’s all great….the flavors all work so well together!! You could probably add a bunch of other stuff, like shredded carrots or chickpeas and it would be equally as fabulous!!

Great recipe! I put in chopped dates instead of cranberries unless I can find cranberries that don’t have added sugar or oil in them…
I also use coconut yogurt with about 1-2 tablespoons of avocado oil for healthy fats. I usually add pomegranate seeds instead of apples. Sometimes I add sesame seeds as well along with the nuts….YUM!

I use Hellman's mayo, a dash of red wine vinegar, a packet of Stevia, salt and pepper, toasted walnut pieces, dried cranberries, diced onion and broccoli.
