I was blessed by fried Panhas (panhaus), fried onions, mashed potato's and apple sauce by my grandmother. My grandmothers brother was still raising 2-3 pigs and butchering was a family gathering.
We butcher 1 pig a year and we have enough.. In my country butchering a pig is like a holiday.. This year was tough the pig was big almoust 600 pounds..we have a lot of work because we use the whole pig exept the bones.. Again sory for my english im from slovenia

Now can you only do this when it's below freezing temps? I'd like to try this but south Alabama doesn't stay cold long enough.

My dad is the expert, but I would say you would need some kind of refrigeration.
Yea you need to much salt to preserve it
Needs to be below 40 at least while you curing , then you can smoke it.
