Btw, telling people how to clean up, especially right after finishing pouring the liquid into the molds was brilliant. Even on glass and ceramic it’s hard enough, spoons are next to impossible.

Ingredients 1/2 cup honey or maple syrup 3 tablespoons lemon juice orange juice, apple cider vinegar, or another acidic liquid of your choice Grated fresh or powdered dried ginger to taste optional 1 packet powdered sugar or vitamin C powder optional Instructions Whisk honey with lemon juice in a medium saucepan off-heat until thinned into a syrup. Add ginger (powdered or grated) if desired. Turn stove on to medium-high heat and casually stir with spatula. As foam appears around the edges, turn heat off, stirring until foam is incorporated. You’ll see the clear, viscous honey become creamy and opaque. Repeat step 2 until the honey visibly thickens. It’ll become darker and harder to stir. If you have a candy thermometer, watch for the “hard-crack point” or 300º F. (You can also stop cooking the honey at around 250º to get a taffy-like candy.) You’ll know you’ve reached the hard-crack stage when the honey can’t help but bubble up, it coats the back of a spoon, and/or it hardens into a ball when dropped into ice water. Honey burns easily, so take care to check temperature/spoon coat/ice water test often. Pour candied honey into silicone molds and leave to cool for about 1 hour. Carefully press mold cavities from the bottom to release candy. To keep honey candies from being too sticky, drop them from the mold into either a bowl of powdered sugar or powdered Vitamin C and cover them liberally before wrapping. Put candies in wax paper or candy foils and twist shut to store. Thought you might like this to try going to try some myself!
Sticky messy projects? Put a bowl or pot in the sink, fill it with hot soapy water. Every time you need a wash, it’s always ready. This is so cool. Love honey pops. Didn’t think about different honeys giving you different flavor profile. Great job, Steph.

Very cool Stephanie! Now i remember watching the women of our family making candy and they used water method to tell what stage the candy was at meaning dropping a bit into ice water depending on how it formed a ball was cracked. I have made fudge, Carmel and diventy but never hard candies.
Stephanie I am wondering since you have a dehydrator now if you couldn’t pour your honey into your molds, add your sticks, then pop the whole thing into the dehydrator. It might be worth researching, as I don’t know if you can put non food items, ie: the molds, into a dehydrator. ❤️🙏

Hey Stephanie Home Economics Teacher here you need to use the correct measuring cups to get your ratio right . solids are measured with the metal cups and the liquids are measured with glass. Also use a smaller pan so the tip of thermometer will be in contact to the liquid.

Looks very good, unfortunately I’m not a tea or even coffee drinker. Nor would l like them as a treat. As it is, I love maple syrup but hate the maple “lollipops” that are made here ever spring straight onto fresh snow. My ex MIL and SIL would love these, but if I made and gave these to them, they would throw them out thinking I was trying to poison them. They never liked me because I didn’t drink what they wanted me to drink. Hot liquids, soup, hot chocolate, etc., have to be warm or it feels as if my insides are burning. And lactose intolerant and not into carbonated drinks and was given hard liquor as a child to deal with toothaches. So they never understood why I only drink water. I would made if I knew anyone that would like them.. My mom, aunt and maternal grandparents would have loved these.9

When measuring out the corn syrup, honey or molasses, spray measuring cup with PAM first and nothing sticks.

It's a shame that you can't freeze dry the pure honey in the molds.
You don't have to worry about freeze drying pure honey, as it's lasts pretty much forever. Pure honey has no expiration date.
Freeze drying would eliminate the added sugars.
