For the noodles:
1 1/2 cups all-purpose noodles (192 g)
1/2 cup water (119 ml)
1/3 teaspoon salt
A pinch of baking soda
For the scallion oil sauce: (The sauce is good for about 10 portions. I made more so I can save it up for later)
6 tablespoons extra light olive oil
1/4 onion, sliced thinly
2 stalks scallions, cut into 2-inch pieces
3 slices ginger
1 handful cilantro, cut into 2-inch pieces
1 cup soy sauce (237ml)
3 tablespoons sugar
Others
2 stalks scallions, for garnish
2 tablespoons flour, for dusting
1 tablespoon cornstarch, for dusting

having recipes in cups and sponns is nonsense. the "grams" translation is also not very good. 192g of flower and 119ml of water is 65% hidration which is a really wet dough, you would not be able to make noodles out of it.
This is going to be amazing. I was shopping w my mother and stopped to look at noodles. I would love to try but always stop short bc it’s labor intensive.

Yes, you can definitely use pasta machine to roll it. You could freeze the noodles also. Just make sure when you freeze them, dust some flour over them.
Nice video! However at 4:30 you probably wanted to say 3 millimeters thickness instead of 3 centimeters. That would be a little bit too thick. :)

It's best to eat them fresh. If you can't finish them, you can sprinkle some cornstarch on the noodles, so they won't stick together. Store them for a few days in the fridge. 😊🙏

I used all purpose flour. Yes, you can freeze the unIook noodles. Simply add some cornstarch to the noodles, as they could sticky together easily. Happy cooking! ☺️

They are best eaten on the same day. Because fresh noodles have high moisture content and tend to stick together easily. If you must store them, make sure that you dust some cornstarch over the noodles, so they won't stick together that easily. You can then store them in an air-tight container in the fridge.
