    TRIVIA: What is the difference between Filipino Adobo vs. Mexican Adobo
    A Filipino dish of chicken or pork stewed in vinegar, garlic, soy sauce, bay leaves, and peppercorns.While in Mexican cooking, it is a paste or marinade noun derivative of ‘adobar’ made from chili peppers, vinegar, herbs, and spices.
    Why do Filipinos eat adobo?
    History. The cooking method for the Philippine adobo is indigenous to the Philippines. The various precolonial peoples of the Philippine archipelago often cooked or prepared their food with vinegar and salt in various techniques to preserve them in the tropical climate.
    What does Filipino adobo taste like?
    With the mix of vinegar, soy sauce and garlic, Filipino adobo is a savory dish that is a little tangy, a little sweet and a little salty. The blend and balance of sour and sweet in one dish is a hallmark of Filipino cuisine overall.
    Adobo, in general, can be cooked using different kinds of protein. Chicken is the commonly used ingredient. For this dish, I specifically use Pork Ribs to be more flavorful and added boiled quail eggs. I love the little bit of texture difference these give to the dish.
    While there are many Filipino Pork Adobo recipes out there, I believe my recipe is worth sharing. I have a few tips on how I get pork adobo to taste the way I like to and you will see why. I like my adobo to be not too saucy. The best thing about this dish, the leftover keeps tasting better every time you heat it up!

    * 2 ½ pounds Pork Ribs
