    Ingredients:
    Fresh neem leaves: 1 cup
    Eggplant (medium-sized), sliced into rounds: 1
    Turmeric powder: 1/2 teaspoon
    Salt, to taste
    Mustard oil, for frying
    Optional: Red chili powder, for added spice (if desired)
    Instructions:
    Prepare the Neem Leaves:
    Start by washing the fresh neem leaves thoroughly to remove any dirt or impurities.
    Drain the water and pat the leaves dry using a clean kitchen towel or paper towel.
    Marinate the Neem Leaves:
    In a bowl, sprinkle the neem leaves with a pinch of salt and a dash of turmeric powder.
    Gently toss the leaves to coat them evenly with the salt and turmeric. Set aside for about 5 minutes.
    Prepare the Eggplant:
    Slice the eggplant into rounds, approximately 1/4 inch thick.
    Sprinkle both sides of the eggplant slices with salt and turmeric powder. Let them sit for a few minutes to absorb the flavors.
    Frying Process:
    Heat mustard oil in a frying pan or skillet over medium heat.
    Once the oil is hot, carefully add the marinated neem leaves to the pan. Fry them until they turn crispy and slightly browned. Remove and set aside on a paper towel-lined plate to drain excess oil.
    Fry the Eggplant:
    In the same pan with the remaining oil, add the sliced eggplant rounds.
    Fry the eggplant slices until they become golden brown and crispy on both sides. Remove and place them on a paper towel to absorb any excess oil.
    Serve Neem Begun Bhaja:
    Arrange the fried neem leaves and eggplant slices on a serving plate.
    Optionally, sprinkle with a bit of red chili powder for added spice.
    Neem Begun Bhaja is best enjoyed as a side dish with steamed rice and dal or as a crunchy snack on its own.
    Tips:
    Ensure the neem leaves are young and tender for the best flavor.
    Use mustard oil for frying to impart an authentic Bengali taste to the dish.
    Adjust the salt and spices according to your preference.
