    This is a great video but also worth mentioning that there’s a difference between ultraprocessed and processed. Lots of people seem to think making their own butter is necessary but that’s way too extreme. Most foods are processed in some way, even cooking makes food processed! Difference with ultra processed is like you said, it’s something that you can’t possibly make in your standard home kitchen (and no the calcium, iron, niacin, and thiamin in UK white flour don’t count as ultra processed! They’re there by law for nutrition).

    I’m so glad to see a video about UPF. I try to make all our meals from scratch. The exception being when my sons visit for lunch and would be very disappointed if I didn’t give them bacon sandwiches! I am really looking forward to seeing more videos on this topic. I make focaccia bread for my husband and I but buy Wharburtons tea cakes for my sons. More recipes soon please !🙏 😊

    Watch Chris Van Tulleken he talks a lot about UPF. I’ve also ordered his book to read. He gives a good balanced and scientific view on UPF. It’s insane to think something like 20% of the UK population eat 80% UPF in their diet. As a mother my children do ok, they have lots of home cooked meals, porridge, fruit, home made sauces. I need to learn more about bakery items but overall we do ok.

    You said about putting the bread dough on a windowsill to warm in the sun to prove.
    What I do is put it in the oven, with it switched off, and put a deep tray of boiling water on the bottom of the oven.

    A lot of mum,s don,t have time for cooking from scratch and by the time they pick children up from
    after school clubs and child minders etc they are probably to flippin tired, I agree that these are great items to
    make if like you they are stay at home Mum,s these recipes are super.

    Thanks for this video Sopherina, homemade is the best. Love your rice tip, may try that next time I cook rice.
    I was always advised not to put the yeast next to the salt as it has an averse reaction, I normalyl mix dry then do yeast on the top last.
    My grandma used to make her own bread and I have used a bread machine to make many loaves, now onto my 3rd machine in 15 years so they last and saves aching joints from lots of kneading.x

    Please can you explain the reasoning for cooking rice in the microwave in 20 mins rather than 20 mins on the hob?

      There's absolutely no reason other than I've never tried doing this same method on the stove.. so I'm not sure if it works the same or different!

    Its such a stupid silly thing but ive just never been able to cook rice. Weve all got that one food and mines has always been rice. I try microwaves rice, steam bags ones. And boil in the bag ones. Or just rice in a pot. I prefer the steam bags of rice overall, whenever i do the boul in the bag or rice in a pot its excessively starchy. I am 29 years old and i never knew you could cook rice like the way you've shown and i need to give it a try!

      I couldn’t cook rice until I learnt this- 1 cup of washed white rice 2 cups of water, bring it to the boil then put a lid on and turn it down to a medium low heat and once the water is evaporated it’s done and perfect 😃 hope that helps

      Not stupid or silly! I didn't have a clue either until a few years ago, I'd just not eat rice unless being served rice at a restaurant/someone else's house!
      Try this method, it works for me everytime! rinsing your rice beforehand is important and I always purchase Basmati rice (because it is long grain, which is easier) and fluff it up with a bit of butter at the end. Emily Jane tip below is fab, i think that's for stovetop! I have never tried stovetop but my dad would and it always turned out lovely. Let us know! ♥️

      Once it’s cooked leave the lid on for it to steam for 5/10 mins as well with the hob turned off 😊😊

      @Sopherina I am the same. Rice is nice but am not overly massive with it, and I am vegetarian and a bit too fluffy round the tummy 😅 so I swap it out for steam bag cauliflower rice alot. Normal rice dose make me scared a family member got really sick with it so I never have leftover rice as its a fear thing and due to it I just don't make as much curry's as I used too. But I do really need to try it this way!

    Really pleased to hear you talking about this subject! I am trying to move away from UPF (as much as I can, but not being 100% strict as I don't think that's realistic!) and none of the foodie youtubers that I watch are talking about it so thanks for making this accessible and positive 😊

    Ooh I do enjoy a tinned S & K pie, childhood and also a guilty pleasure. I usually buy the wholegrain microwave rice however will try your method with my basmati tomorrow as I am making a hello fresh meal. Do you reckon brown rice would work with your method or for longer cooking time I find brown rice takes so long to cook on the hob.
    Great vlog today and I really look forward to them, I've watched so many on a day I've been home feeling unwell or a day where its piddling down and I let the ads run so hopefully that helps a bit xx

      Soak brown rice overnight in water before you cook. That’ll take less time to cook.

    Only thing is what if you don’t have a microwave or mixer. People need to know that you can make bread with your hands in a bowl and cook rice in the oven or on top of the stove. I learned that you need to wash your rice first( because of how it is handled and to remove the starch), pour it into a pot and add enough water until it comes up to the second joint of your first finger. Add in your salt and a drizzle of oil( keeps rice from sticking together) Bring rice uncovered to a boil, then reduce to low and cook for 15-20 minutes. You will be able to hear when all of the water has evaporated. Leave covered for around 5-10 minutes for whatever moisture is still in the pot to dry up. Then take lid off and fluff. The easiest most simple way though is to just by an electric rice cooker. Lol. I just do not want to to be reliant upon too many devices. 😊

    If one wants a richer pasta sauce a red wine stock pot (they are vegan) can be added or a beef /vegan "beef" Oxo cube .
    I am a pretty good cook, I've been cooking from I was 11. Mummy thought going vegetarian at 11 was simply a phase and if I'd to make my own I'd return to eating meat again. I have been meat free for almost 40 years and recently I've gone back to being vegan. Point is, I cannot cook rice at all!! Always an utter disaster....I might try your microwave rice ...great video btw.
    I'm contemplating buying a bread maker, I don't bake as I cart stand my hands getting "dirty"...too much of a sensory overload for me. We eat lots of bread in this house, especially when my daughter is home from university. I do buy really good quality bread with virtually nothing in the bread that's artificial for Erin and I....My son won't eat anything other than white kingsmill/hovis and crusty rolls and baguettes.

    Just FYI, most plain microwave rice bags are not considered UPF. And many, many UPF are - according the BDA, BNF and even the SACN study that reviewed the actual categorisation/health risks around them - positively associated with good health outcomes. Things like weetabix, high fibre and lower sugar (but still sugar-containing!) cereals, fortified plant milks with stabilisers to preserve them, baked beans, wholemeal supermarket bread (yes, even sliced bread ! With emulsifiers !) and some cereal bars and yoghurts (nut/oat-based and lower sugar version). There is absolutely a place in EVERYONE’S diet for UPF, and stressing about them, the health implications, and restriction is arguably unhealthier than incorporating them within a balanced diet ever will be. That includes your chocolates, your biscuits, your meal deals, your ready meals. These ARE ultimately safe for human consumption; the UK / Europe has some of the strictest dietary standards out there. Any studies or books or podcasts or men-selling-their-expensive-glucose-monitoring-programmes are so formative, and so correlative (rather than causational) in their findings. Most dietitians - including mine! - say that all those scary-sounding health outcomes of UPF are, in all likelihood, associated with things we already know: eg. Not eating enough fibre, eating salt, added sugar and saturated fat IN EXCESS (some is fine!). *Not* the result of some dark, food-industry plot and unknown chemicals.
    Okay, ramble over! Just wanted to put this out there for any one like me, in ED recovery or not, who sees these videos and feels incredibly overwhelmed and scared.
    @Sopherina This is by no means an attack on your or your channel. I appreciate everyone is entitled to think and do their own thing with regards to health and food, and nutrition is super personal! I’ve followed you for years because of the wonderful messages around and intuitive relationship you seem to hold with food. However, I think it’s time for me to unsubscribe, as this sort of content isn’t helpful to me right now. I wish you and your gorgeous family all the best x

    Ive been cooking rice on the stovetop/ in pressure cooker successfully for years. Decided to followed this method for a change. It was disastrous. The rice was like a hockey puck. What a waste of food. I will never follow another recipe of yours. Rubbish
