We are trying to come up with a name for our family's freeze dry business with our new Harvest Right. Can we use names that are already used if we are in another state? Some of the names we are looking at are already used by other companies.

I wouldn't, if they are a registered business on the federal level, or even on the state level, they have rights to the name and if they find out you are using that name or something that sounds like it, you might end up with a cease and desist notice and a lawsuit for damages. It's best to come up with your own name not in use, or that isn't registered. You can "sometimes" use the same business name in your own state or another state, if it is not in the state where the business name is filed, and it doesn't violate trademark rules. This is somewhat common practice for smaller local businesses, but often gets wrapped up in legal red tape at some point.

I had someone in another state using a TikTok and Twitter handles that were the same as my business name, though they were not using it for business, I trademarked my business name locally and federally, and eventually was able to get those handles on social media from them through legal resources, I first offered to buy the handles from them, but with no response. It wasn't the route I was looking to go but became the only option. I also had someone with a new business in another state that was VERY close to the same name as my business "likeness", and even used a logo and colors similar to mine, they were ordered to change their name and colors / logo after two years of litigation. However they were also using misleading advertisements to "trick" customers into thinking they were us.
