Quick Braised Tofu Pot 鸡蛋豆腐锅
Ingredients:
Serves 3 - 4 pax

320g (11.29 oz) egg tofu (or firm tofu)
1 shallot (chopped)
1 thumb-sized young ginger (chopped)
3 cloves garlic (chopped)
2 Chinese dried mushrooms (rehydrated & cut)
2 tablespoons spicy broad bean paste
0.5 tablespoon black bean paste
200g (7.05 oz) minced pork (can use minced chicken)
0.5 tsp sugar
60g (2.12 oz) carrots (sliced)
250ml (8.45 fl oz) water (feel free to add a little more water for slightly more sauce)
100g (3.53 oz) prawns (deshelled & deveined)
60g (2.12 oz) snow peas (can also replaced with broccoli)
Some cornstarch solution
1 beaten egg
1 tablespoon Chinese cooking wine - Shaoxing Huatiao wine (optional but recommended)

Last year when mco all my grandson are at home l cook this egg tofu with broccoli or cauliflower with carrot and chicken slice they all love it. And say grandma can you cook this dish everyday. It so yummy. And l cook the dish 1 week 3 time for them. Thanks for sharing.

Easy to cook , many ingredients, different mode of prep - shallow fry toufu ,pan fried shallot garlic meats , braise and cover pan to let off steam . Prawns & peas , sliced carrots shld add in early , add flour and egg, wow too easy cooking . Shao Shin wine sure happenings ...😃

I think dried mushroom smells better due to sunning. It’s like dried Shrimps. Probably makes it more aromatic perhaps you can use both haha.

Hi Roland. This does not actually refer to only this particular recipe but can you offer an alternative(s) for some of the non-halal ingredients that you use? For e.g for the Mirin used in the Teriyaki sauces, I understand this can be replaced with some apple juice? How abt an a replacement of the Shaoxin wine. This would be most helpful if we are preparing to cook for our Muslim friends & neigbours.

Can I use oyster sauce instead of the black bean sauce
The taufu clay pot looked good. Since we not eat spicy, can advise if I can replace spicy broad bean paste & black bean sauce with the normal taucu 豆醬?or any other alternative suggestion like oyster sauce?
No worries about the spicy broad bean paste. As the amount used is very little, you won’t be able to taste the spiciness at all. Happy cooking!
