    Thank you for this. I was looking for a vietnamese pate recipe since most Bahn Mi videos I saw, used ready made pate. Hope you post more vietnamese food. ❤️

    My shortcut to making pate is caramelizing onions and garlic, and adding a bit of fish sauce and salt, and a lot of black pepper bc I love it. Then I throw them in my Vitamix or food processor and I add liverwurst or braunschweiger, room temp butter and cream cheese and blend to make a paste. Then I add milk in small amts as I blend till I get the consistency I like. Sometimes I add a teeny amt of sugar to mellow out the sourness of the liverwurst, but the caramelized onions, butter, and milk tend to be enough most times.

    Sometimes if you can find a grocery store that sells Boars Head lunch meat in the deli,,,they will have liver wurst. Boars Head liver wurst is the best !!
    And a lot of walmart's have liver wurst in the hot dog area under the name Brunswager (not sure how to spell)

    I've been trying to get everything together for Bahn Mi in my sandwich shop. We have all kinds but this is the godliest sandwich. This is one of the most classic ingredients, do you ever add wine?

      Yes. I sometimes add rice cooking wine.

      Some do, I usually don't add bread. My grandma didn't add bread. I'll try some day.

    I can't believe my local supermarket don't sell liverwurst and cured liver pate. I ended up driving 1 hour to a walmart just to find them lol. It is one thing that sucks about living in the middle of the nowhere in upstate NY.

      I'd use within a week. Keep some in the freezer for a few weeks if you can't finish all.

    surely. Viet version pate for Banh Mi looks tastier than Traditional French Style Version Liver Pate. quick question. Is it ok to add some fish sauce to make viet style flavoring liver pate??? I've seen some recipes even adding fish sauce to enhance the pate flavor for banh mi spread.... btw.. Your pate looks yummy..... 😋

      I have never added fish sauce. I think a couple dashes won't hurt. The combination of soy sauce and fish sauce does make it very tasty. Just don't add a lot it can over power and might not be pleasant.

    hi Ms Fish Sauce Mama. i love your recipe but i want to tell you a secret to make this vietnamese food. it is lard and fish sauce. you can try it when you do pate later. lard and fish sauce is Vietnamese secret so don't say with other.😉

      😁 thank you... that must taste super yummy. My grandma used to do it with lard, and sometimes little bread, but I feel so guilty so I sort of cut it out for my family. It sure is good though. Thanks!

      @@fishsaucemama so that is your pate because you changed the recipe to be suitable for your family or your emotion. that's not the traditional version that people want to know. I was so surprised when I see your instruction and I wonder if are you a Vietnamese who is living oversea too long. such as somebody teach how to cook vietnamese PHO but she doesn't like green oninion so her Pho hasn't green oninion. Anyway, I appreciate your ideal but please don't use VIETNAMESE + something because when you say that you are representing a national culture of the whole country of 100 million people. thank you for reading it and sorry if you feel hurt.

    I've read that you can freeze Pate, is that true?

      Yes. I do freeze half portion most of the time when I make a batch. Usually about 2-4 weeks I'd finish the other half.

    YOU LIE !! At 7:20, you say "add a couple tablespoons of butter:, but what you do add is Country Crock which is NOT butter... From the website, Country Crock is not butter, and is not even margarine. .... Contents - "Purified Water, Soybean Oil, Palm Kernel and Palm Oil, Salt, Lecithin (Soy), Vinegar, Natural Flavors, Vitamin A Palmitate, Beta Carotene (Color), Vitamin D3."
