I can so relate. 5 years ago, I could barely boil water. After watching many Bigger Bolder Baking videos, and doing a lot of baking myself, I actually feel pretty confident.
My oven used to burn everything on the bottom and raw in the middle. The smoke detector would go off after not being in the oven no more than 20 minutes. I cried many times till I replaced my bottom and top elements. I have such an old small oven the oven store had a hard time finding what I needed, but I'm a happy baker once again. Love one pan baked cookies.
That looks so good!! I've never tried this before, but my favorite candy is Giradelli dark chocolate sea salt caramel squares and I bet they would be literal perfection in a skillet cookie!

Hi Shelly. You can sub the flour with almond flour. You can to with the sugars, but the result will not be the same as sugar not only sweetens, it also helps with the texture and structure of the bake. But it can still be a good result.

I love the skillet cookie but the center (for me) is a bit too raw. How much longer would you suggest I leave it in the oven? I like it soft but not gooey - the texture of a regular cookie.

Everyone's so anal about not scooping but I see Anna Olson scooping every.single.time. And her bakes were always fine! I'm a scale user but I do use cups at times (depending on recipe though most of the time I use the scale but if the recipe comes in cups I won't bother converting) and I scoop AND spoon into cups and couldn't see any difference. Just make sure when you scoop you don't press or pack it in. And fluff up the flour prior. But using cups there IS ALWAYS the chance of air pockets when you spoon in (coz they say do not shake or knock your cup) so HOW CAN THAT BE UPHELD AS ACCURATE with different air pockets every time? Scale is always the way to go for accuracy. But my point being, spooning into cups can never be accurate and I don't see failed bakes yet from the pastry chefs that use the method. So... do not worry too much whether it's scooping or spooning into cups... your bakes will be fine as even spooning is not accurate and this is always the go to method by most chefs.
It looks delicious but I just can’t do the gooey inside, that goes for any dessert as well. Like I don’t get the appeal behind lava cake either. It just looks under done. I wonder if I could bake this longer at a lower temp to get a non gooey cookie??

Make sure you season your new skillet before trying any baked product in it. Easiest way is to fry a batch of chicken in it.
