The letter ayin ע is basically the same sound as ع in arabic (the accent is softer, though). About final letters, idk if you noticed but every final letter other than mem is like the normal one but with their bottom line straight downwards (צ-ץ, פ-ף, נ-ן, כ-ך). Interesringly, the original form of the letters was the final one. But with time people found out that this straight line cuts the flow of the writing, so it just turned into the normal letter we see today overtime. The original stayed at the end of the word because it doesn't affect the writing flow, you finished the word anyway. Don't know why mem has it though, it's just there.
Israeli hebrew was influenced by Ashkenazi hebrew, Israeli Hebrew speakers pronounce Ayin the same way they pronounced Alif (the glostal stop), only some Sephardic jews still retain the Ayin Voiced pharyngeal fricative [ʕ] sound in day to day speech.
