I don't understand Indian food, every recipe has the same exact spices :tumeric, garam masala, cumin , coriander powder , cumin seed . Every single recipe has these. Then you add a vegetable , add garlic or onion , or both, add chili powder or not, plus the additional spices that can be : mustard seed, curry leaves, asafetida, fenugreek, coriander leaves, then you add , or not, a sauce can be tomato, can be coconut milk, or cheese(curd). There you have , all the Indian recipes.
And the taste turns out so different every single time😋. Thanks to the natural taste of fresh ingredients and the quantity, order of addition, and time taken to cook. that is how simple Indian food preparation is !! Enjoy !

No. That's just north Indian food. South preparation is different and lots of varieties😊
