- This one is a spin on my Beef Pot Roast. Made a few changes that compliment pork. Give it a try and let me know what y'all think!

PORK ROAST & GRAVY
Pork Shoulder Roast (3-4 lbs)
Pi-YAHHHHH!! Seasoning
2 Tablespoons of Vegetable Oil
1 Yellow Onion
1 (8oz) Pack of Sliced Mushrooms
2 Teaspoons of Minced Garlic
1 (14.5oz) Can of Chicken Broth
1 Box Onion Soup Mix (2 envelopes)
2 Tablespoons of Worcestershire Sauce
6 Carrots
1 lb Baby Dutch Yellow Potatoes
2 Tablespoons of Cornstarch
Small amount of Cold Water
Start out by heating a 5 to 6 quart pot or larger on a Medium to Med/Low heat.
Chop the Onion. Set aside.
Generously season both sides of the roast with Pi-YAHHHHH Seasoning. Pat down the seasoning on all sides.
Coat bottom of the pot with the Vegetable Oil.
Sear the roast for 5-6 minutes on each side. Monitor closely in case your pot is too hot.
Once the roast has a nice sear on all sides, remove it from the pot and place into a bowl off on the side.
Add the Onion to the pot and begin stirring, breaking up any drippings. If you have drippings that are really stuck to the bottom of the pot, just add a small amount of cold water. Sauté for about 5 minutes, then add the Mushrooms.
Sauté for about 15 minutes then add the minced garlic. Sauté for another 5 minutes.
Meanwhile, mix the Can of Chicken Broth, both Envelopes from the box of Onion Soup Mix, and Worcestershire Sauce in a measuring cup.
After having sautéed the garlic with the onions and mushrooms for roughly 5 minutes, pour a small amount of mixture in the pot.
Stir breaking up anything stuck to the bottom.
Push Mushrooms and Onions to one side, and add the roast to the other side. Scoop some Mushrooms and Onion on top the roast. Pour rest of Onion Soup mixture on top of the roast.
Bring to a boil, Cover, and let cook for 1 hour.
At this time cut the Carrots into larger pieces and potatoes in halves. Put into a bowl on the side.
After the 1 hour mark add the Carrots and potatoes to the pot. Bring to a boil, Cover, and cook for another hour and a half.
At the end of the hour and a half mark, remove the roast from the pot, placing into a bowl on the side.
Mix the Cornstarch and a small amount of cold water together. Slowly stir the cornstarch slurry into the pot.
Break apart the roast, and then add back to the pot. Cover and cook for another 30 minutes on a low heat.
Serve over rice or mashed potatoes.

Been using onion soup mix for years, and I use in it almost everything I cook. It works great, and the best thing about it is that it doesn't add any weird, unwanted flavor, so that's why it goes well with most dishes, with the exception of white beans of course. Also, with a pork roast, I always get the bone in, even though I end up paying for a bone. But the flavor it adds is well worth it. I haven't experimented with using bone broth in a pork or beef roast, but it's a thought. I'm not afraid to throw in a couple of chicken and beef bullion cubes either. They add salt, so as always...ADD SALT LAST. Speaking of last...GREEN ONIONS AND PASLEY !

Hey Ninja! Piyaaah! Have you ever had pork chop and crab stew? I used to eat that when I worked for Cenac Towing in Houma. It's incredible, just pulled to chops smothered in plenty of thick daark brown gravy with a few crabs split in half and smothered with them. It's awesome, would love to see you do it! Never had it outside Terrebone Parish or seen a recipe for it. Just seen a guy make a dark roux (enough to fill a Dutch oven 3/4 full), pork chops, crabs, Cajun seasoning and check for salt and pepper when the pork chops get tender. Dish it over rice and get messy eating the crabs out of it.

I've watched dozens of your videos. Love them all so far. But this might be my favorite, because I've been on a personal campaign for 2-3 years preaching the benefits of PORK in these kinds of recipes. I make a stew or soup at least one night a week, and a few years ago I started using pork for my soups and stews as often as chicken and beef. For some reason I cannot fully understand, pork just does it BETTER! Almost nobody makes "pork stew," while everyone makes beef stew, chicken soup/stew, venison stew - which are all great - but PORK stew is somehow almost completely overlooked. And it should NOT be! Great video!
Pork stew is BETTER than a beef stew any day. A lot more flavor, richer, and always tender.
It may be because of religious views, but I'm not sure? Pork is not Kosher, shrimp, crabs, catfish, or bottom dwelling fish? They are not Kosher and considered unclean meats accordioning to Jewish Law?

I will tell u if u dice tomatoes and cook them with the trinity. It will add a smoothness u don't even know. Also if u save old onions and fry them down, u can freeze them and save them as french onion soup base and it is delicious.
No sugar needed for the tomato since I have carrots

Ninja, have you ever considered making a Gumbo with pork??
I have not, but I’m sure it could work.
You can use smoked pork neck in your gumbo in addition to chicken. Also, add some smoked green onion sausage, Smoked Kielbasa, left over beef/pork roast, etc, or whatever you have on hand. A gumbo does NOT have to be just chicken, or seafood.
I made this and everyone raved about it. I thought it was too sweet. Maybe I could’ve eliminated the Worcestershire sauce? Carrots?

Will this come out as good in a slow cooker?
You want to brown the meat and onions for that flavor. But suppose after the browning is down and onions are cooked that you can throw that into the crockpot. I have tried making a roast in an pressure cooker and it came out great. You can sear in it and then pressure cook it. Only took 1 hour and was so tender! Only recommendation is that whatever liquids you add will not evaporate like cooking one on the stove so don't have to add as much water. Or do what I did and add cornstarch!
Kent Rollin's take. He skips the buerre manie which I don't think you should do because it gives you a chance to dial in the seasoning and thickness of the sauce. Buerre manie is equal parts soft butter and flour one tbsp flour per cup of sauce then whisked into the sauce as it comes to a full boil then simmered till it's just like you want it.
I'm going to walk to Rouses and get some pork chops and gumbo crabs, a bell pepper and some liquid crab boil. I'm going to see if I can figure out that pork chop and crab stew.
