  • Greek Pizza
    Dough:
1/2 c warm water (around 105°-110°, but not above 120°)
    1/2 tsp honey
    1/2 tsp dry active yeast
    1 Tbsp olive oil
    1 1/2 c plain flour
    1/2 tsp salt
Combine ingredients in a mixing bowl in the order they’re listed, pausing after the yeast to make sure it gets foamy (which means it’s active). Mix well by hand until all the flour bits are incorporated into the ball of dough. Wrap dough in a plastic kitchen bag that has been coated on the inside with a bit of olive oil (to prevent it from sticking to the bag) and place it in the fridge, where it will rest for 2 days or up to a week or so. Rated dough behaves SO much better than fresh,y made dough.
    The pizza:
About 1/2 c pizza sauce (full recipe accompanies this)
8 ounces whole milk mozzarella, sliced into small pieces (it’s difficult to shred because it’s soft)
    about 1/3 c slivered onion
about 1/3 c slivered green bell pepper
about 1/4 c posted Kalamata olives, halved
about 1/3 c feta cheese, crumbled
Preheat oven to 475° and place pizza stone on the very bottom surface of the oven (you’ll be transferring the pizza directly to the stone once it preheats). Roll dough out into desired size and place on kitchen towel which is on a pizza peel (watch the video; it’s a challenge to describe this trick to getting it in the oven!); tuck under the edges of the dough all the way around the pizza to form a “lip”. Spread pizza sauce over the dough all the way to that lip at the edge. Top with the mozzarella pieces; scatter top with onion slices, pepper slices, olive halves and the crumbled feta. Transfer pizza to the hot pizza stone using the technique shown in the video. Bake for about 10 minutes in a 475° preheated oven or until all the toppings are golden brown and the cheese is bubbly. Transfer pizza back to the pizza peel for removal from the oven by placing the peel directly at the closest edge of the pizza, and using tongs, grasp the closest edge of the pizza and pull it onto the pizza peel. Allow pizza to cool just a bit then slice and serve. Enjoy!

Loved this video and the way you tell exactly how to make the dough and put the pizza together…especially the info about the 2 cheeses. Thank you!!

Where can I find your recipe for pizza sauce?

@@richardkramer3515 Great question! I had to ask my husband where it was. 😄. In the description, scroll ALL the way down and there will be a link to another video titled Restaurant Quality Pizza from Scratch and the recipe is found in the description of that. There will be another video for pizza sauce coming out within the next week or so (and a short) but it’s the same recipe as found in this other video. I hope your final product if even better than what you’re expecting! Keep me posted on your progress! 😊

Great video but then you lost me when you scraped the toppings out from under your fingernails and wiped them on the dough.

@@SunshineSkully Ha! I can see there that might make one question my reputation. Let me assure you, before I start preparing ANYTHING I make sure my hands ( under my nails, and my wrists too) are clean and ready to roll. I used to be an orthodontic assistant and I’m all too aware of germs and how to clean your hands to avoid contamination. But I’m glad you have a sharp eye and caught that! People like you and myself are the ones who are afraid to eat in restaurants; I’ve seen enough and I’m just too scared. 😄. Sorry I lost ya! Maybe you can just watch my videos with gardening hacks or art projects. 😂

If your object was to make a video where people watched you, and listened to you, then you succeeded. You might notice that the most successful food videos concentrate on the food. 28 minutes is awfully long for what you're doing.

@@pudnbug my object is to show new recipes that are better choices but thank you for your comment. I’d love to condense many of these videos but then I get people asking “WHY SO SHORT?!”. Sorry it’s too long for you but there’s always a recipe in the description you can hop over to if you’d rather.

I sure did ENJOY and LEARN from your video here! You made it look simple enough for me to try making one from scratch. I have never made pizza dough but going to try your method…and I have some dish towels just like that I found on Amazon.
