The cutting of Ganesha's head, is this literal or symbolic? Because I couldn't imagine any grown man doing that to a boy even if he's gotten into ones nerves.
In some other video Sadhguru said the reason for cutting the head is to give enlightenment because the boy is behaving ignorantly. and for many people if they are receptive during the last moment of death they would get enlightened. In the end in Shiva's perspective he is 'everything', so in a way he cut himself.
