Sitting at the mooladhara, the kundalini shakti needs to move up to the Agjya Charkra and who is better than a rat to pierce through other than the Rat, Ganesha sitting on the rat escorts Sakti through the different Chakras easily.
Yeah, who knows what the writer meant to symbolize? The rat would squeeze itself fearlessly through any small space. A "vehicle" represents movement through a path. Also, Elephant's small mouth and big ears could symbolize "talk less and listen more " for greater wisdom and fulfillment - the snake as an intelligent belt holding up the infinite big belly of wisdom. ❤❤❤
