EPIC Roast Potatoes every time - SUPER SIMPLE recipe!

  • You can't make a British Sunday lunch without roast potatoes! Check out this video for my super simple, fuss-free minimal effort recipe that yields perfect roasties with a crunchy outside and fluffy middle every single time!

    Recipe (makes 10 to 15 good sized roast potatoes):
    Peel 5 or 6 medium-sized sized floury potatoes, Maris Piper or your most floury local variety and cut each into three roughly-equal sized pieces.
    Wash very well under cold running water to remove all excess starch, until water runs clear.
    Starting from cold, add 1-2tsp salt and bring to the boil over a medium-high heat. Once they begin to come to the boil, reduce heat to medium and boil for fifteen minutes, until not quite fork-tender - they should resist the fork slightly and crack when pressed a little.
    Drain, shake lightly to roughen the edges a bit, then allow to steam for 10 minutes until dry.
    Meanwhile, pre-heat oven to 200°C / 400°F (convection) or 220°C / 430°F (conventional) and generously oil a heavy baking tray / sheet pan with high-smoke-point oil. Add beef dripping, duck fat, or other saturated fat as liked and place in oven to pre-heat.
    Prepare a few whole sprigs of fresh thyme, and halve one bulb of garlic crossways.
    After ten minutes or so, when the tray is hot and the oil is shimmering, remove from the oven and, working quickly (but carefully!) add the potatoes, thyme and garlic, and arrange in a single layer, ensuring there is at least a little space between the potatoes.
    Roast in the oven for 50 minutes, checking halfway through and turning / moving as necessary.
    Add a good pinch of salt, and give the potatoes a final turn to ensure well coated in the seasoned fat.
    Allow to roast for 10 to 15 minutes more until crispy, golden and delicious.
    Remove from the oven and serve in a dish lined with kitchen paper to absorb excess oil.
    Serve immediately.
