    Looks very good. I have trouble getting jars opened too with arthritis in my hands and fingers so I told my son I wanted a jar opener for Christmas when he asked what I wanted. I found one on Amazon that I liked. My parents used to give us a Pomegranate in our stocking at Christmas.

      Thank you. I have one of those openers but the jar lid was too large. We were always given a satsuma and some nuts (not shelled).

    This looks really delicious! I would have to try with extra pepper rather than eggplant/aubergine because my husband really dislikes eggplant!

      Thank you. Yes jars can be difficult. I have something that helps sometimes but this container was too large. It was very frustrating and I thought what would Roger do and brute force worked :-)
