Well. I made it for New Year's Eve dinner , a side for my Roast Rack of lambs . I have no bacon nor panchetta, so I just used the one ingredient I have in my fridge - spinach and cheese. Loll So delicious 😋 Happy New Year !!

And I'm glad you didn't take out the gills or throw away the trimmings. Some people don't like the gills, but I think they give the mushroom a richer flavor.
Just made mine! The first time ever doing these. I made mine with mozzerella and parmeggiano, white pepper, olive oil in the roasting pan, butter parsley. No salt due to the parmaggiano. Because i am learning to make these as a gesture to my vegetarian husband, I am going to use bacon flavored Nooch. I think it's the spinach making liquid. 25 minutes for the large ones. Amazing.
What I love about stuffed mushrooms is there's just so many things you can stuff into them. And because you can't over cook mushrooms ( well of course you can burn them but that's not the same thing) I highly recommend folks who are new to cooking, especially grilling to do stuffed mushrooms. It was more of us getting some welcome great weather here in the Northwest. I'm currently in the final process of getting my Lonestargrillz Large IVE out of the crate. It weighs about 1,200 lb and is fairly top heavy so I'm having to build some ramps for the tires. First cook this weekend. 😄👍🔥🍻

I like to remove the gills with a spoon so they are not as watery when cooked, but have cooked with gills before too when i feel lazy lol. You have given me some great ideas here, so thanks for the video!

Adding it as a stable. I used Habernero cheese because I forgot to buy the cheese. Oh, my first error was I started the onion first. When I discovered that, I emptied them into a bowl and added them to bacon later.

5 stars! Just made this for dinner tonight & served it with wild rice & an artichoke. I had some leftover cooked lentils and added about 1/2+ cup to the mixture at the end. So much flavor w/ the bacon & onions, did not add ANY seasoning, not even salt or pepper.Satisfying but not heavy. Made a vegan version for my mom due to gluten & dairy intolerance. I used vegan parmesan mixed in and purchased a vegan gouda to sprinkle on top- that tasted good but didn't melt. I wonder what vegan cheese is good for melting?

You can peel them, you don't have to clean the edges with a knife, pull the edges from bottom to center and you get a perfect clean white housing, they peel so easily and timeless.

Hubby bought these by accident so I've been searching the net for simple recipes. Yours looking easy enough as I have all those ingredients. You don't remove the gills. Do you find the shroom bitter leaving the gills or not? I'll repost or edit when I make this dish this weekend, Oct. 2021
Hi Maddy, you can remove the gills if you like. It’s a personal preference. We have another video where we did remove them I really don’t notice much of a difference in flavor. Good luck. 😊

Made the stuffed mushrooms VEGETARIAN. Just added some breadcrumbs. Used goat mozzarella. They were one of the best or best thing I’ve ever tasted. Also added fennel seed and Italian spices. Will try next time with a touch of smoked paprika to replace the smokey taste of pancetta.
